It is said that the most beautiful meals are those where each ingredient tells a story. The Danube Waves Cake is not just a dessert, but a sweet journey, with a combination of flavors that will delight your taste buds. This recipe was discovered in a cooking magazine from 2008 and has since become a favorite in many households. With a fluffy texture, a rich chocolate flavor, and a tart note of sour cherries, it is perfect for celebrating special moments or simply indulging yourself.

Ingredients

For the base:
- 1 jar of pitted sour cherry compote (about 400g)
- 250g margarine (ideally at room temperature)
- 300g sugar
- 6 eggs
- 7 tablespoons of milk
- 350g flour
- 1 packet of baking powder (can be saffron for a more intense color)
- 2 tablespoons of cocoa
- 1 vial of rum essence

For the cream and decoration:
- 2 packets of vanilla pudding
- 750ml milk (divided)
- 6 tablespoons of sugar
- 100g soft butter
- 100g cooking chocolate
- 100g whipped cream (you can use ready-made whipped cream to save time)

Instructions

1. Preparing the Cherries: Start by draining the cherries from the compote. Place them in a sieve and let them drain well. This step is essential to avoid excess moisture in the base.

2. Preparing the Base: In a large bowl, beat the margarine with the sugar and a pinch of salt. Use a mixer on medium speed until the mixture becomes light in color and fluffy. This will add air to the mixture, giving it a light texture.

3. Adding the Eggs and Milk: Incorporate the eggs, one at a time, ensuring that each egg is well incorporated before adding the next. Then, add the milk and mix well.

4. Dry Ingredients: In another bowl, mix the flour with the baking powder. Gradually add the flour mixture to the wet mixture, mixing gently until combined.

5. Dividing the Mixture: Divide the batter into two equal parts. Add cocoa and rum essence to the second part and mix well.

6. Baking the Base: Line a baking tray with parchment paper. Pour half of the white batter into the tray, then pour the cocoa batter on top. Use a spatula to spread the batter evenly. Place the drained cherries on top of the batter and put the tray in the preheated oven at 180°C for about 60 minutes, or until the base is well baked (you can check with a toothpick – if it comes out clean, it’s done).

7. Cooling the Base: After the base is baked, let it cool in the tray for 10-15 minutes, then carefully remove the parchment paper.

8. Preparing the Cream: In a saucepan, dissolve the pudding powder in 150ml of milk. In the remaining milk (600ml), add the sugar and bring it to a boil. When it starts to boil, add the pudding mixture and stir constantly until it thickens. Once thickened, remove from heat and add the soft butter, mixing well.

9. Assembly: Pour the pudding cream over the baked base and smooth it out with a spatula. Let it cool completely.

10. Preparing the Glaze: Melt the cooking chocolate and mix it with the whipped cream. You can use a small saucepan over low heat or a microwave to melt the chocolate. Once melted, mix well until smooth.

11. Finishing the Cake: Pour the chocolate glaze over the pudding cream and let the cake chill for a few hours (ideally overnight).

The Danube Waves Cake is wonderful served cold, but you can accompany it with a scoop of vanilla ice cream or a chocolate sauce for added flavor. A cup of tea or coffee pairs wonderfully with this delicacy.
