Pork Chop in Blanket
We beat the pork chops like for schnitzels, making sure they are evenly thin, which will allow for quick and even cooking. We season them with salt and pepper, making sure to cover both sides well to intensify the flavors. In a deep bowl, we will prepare a delicious mixture from the peeled and washed potatoes, which we will grate on the fine side of a box grater. This will provide a pleasant texture and help bind the ingredients.
After we finish grating the potatoes, we add the two whole eggs, flour, finely chopped parsley, half a teaspoon of ground cumin, salt, and pepper, adjusting the seasonings to taste. We mix everything with a spatula or wooden spoon, being careful not to leave lumps, until we obtain a homogeneous but thicker composition. If we find that the mixture is too soft, we can add a little extra flour to reach the desired consistency. Finally, we incorporate 250 ml of sour cream, which will add a pleasant creaminess to the dish.
Once we have obtained the ideal mixture, we take the prepared meat slices and dip them in this mixture, ensuring they are covered on all sides. This will create a delicious crust during frying. In a pan, we heat the oil over medium heat, making sure it is hot enough but not smoking, to avoid burning the crust.
Once the oil is ready, we place the pork chop slices in the pan, being careful not to overcrowd them so they fry evenly. We let them fry until golden and crispy on one side, then turn them over with a spatula. It is important to fry them well enough to enjoy juicy meat on the inside and a crispy crust on the outside.
After the pork chop slices are ready, we take them out onto a paper towel to absorb the excess oil. These delicious potato-crusted pork chops can be served alongside a fresh salad or with mashed potatoes to complete the meal. Bon appétit!
