Baking time: 15-20 minutes
Total time: 40 minutes

Necessary ingredients:

- 500 g fresh spinach
- 250 g cottage cheese
- 200 g thinly sliced pressed ham
- 2 eggs (1 whole and 1 egg white)
- 1 bunch of fresh dill
- 1 bunch of green onion
- 1 bunch of green garlic (or 3 cloves of garlic)
- 2 tablespoons of flour
- Salt and pepper to taste

A bit of history:

Rolls are traditional dishes in many cultures, with deep roots in international cuisine. Whether sweet or savory, they were created to blend flavors and textures, as well as to provide an attractive presentation. The spinach roll, in particular, is often associated with Easter celebrations, being a delicious way to incorporate vegetables into our diet.

Step by step in making the roll:

1. Preparing the spinach: Start by washing the spinach thoroughly under cold running water. Choose fresh leaves, free from spots or dry areas. In a large pot, bring water to a boil and add a teaspoon of salt. When the water is boiling, add the spinach and let it boil for 10 minutes. This step helps to soften the leaves and preserve the vibrant green color.

2. Draining and chopping the spinach: After the spinach has boiled, drain it well in a colander and let it cool slightly. Then, chop it finely with a knife. This will help the roll to be easier to roll and have a uniform texture.

3. Preparing the mixture for the roll sheet: In a large bowl, combine the chopped spinach with the finely chopped dill, onion, and garlic. Add the whole egg, the egg white from the second egg, flour, salt, and pepper to taste. Mix all the ingredients well until you obtain a homogeneous mixture.

4. Baking the roll sheet: Prepare a baking tray (dimensions 23 cm x 34 cm) by greasing it with a little oil and lining it with baking paper. Pour the spinach mixture into the tray and level it with a spatula. Place the tray in the preheated oven at 180°C for 15-20 minutes. The roll sheet is ready when it is lightly golden on the surface and firm to the touch.

5. Preparing the filling: While the roll sheet is baking, you can prepare the filling. In a bowl, mix the cottage cheese with the egg yolk, salt, and pepper. Make sure the cheese is well mixed and has a creamy consistency.

6. Assembling the roll: Once the roll sheet is baked, remove it from the oven and let it cool slightly. Place it on a sheet of baking paper and carefully unroll it. Spread the cheese filling evenly over the entire surface of the sheet. Place the slices of pressed ham on top of the filling, covering it evenly.

7. Rolling: Using the baking paper, carefully roll the sheet, starting from one of the corners. Make sure the roll is tight, but not too tight, so it doesn’t break. Once you have rolled the sheet, wrap it in baking paper and place it in the fridge for about 30 minutes.

8. Serving: After the roll has cooled well, take it out of the fridge and cut it into slices about the thickness of a finger. You can decorate the slices with lemon slices and dried salami roses for an elegant look. This will add a touch of freshness and enhance the presentation.

Practical tips:

- Use fresh spinach for the best results. If you don’t have it on hand, you can use frozen spinach, but make sure it is well drained.
- If you prefer a spicier version, add some chili flakes to the cheese filling.
- This roll pairs perfectly with a fresh green salad or yogurt-based sauces for a pleasant contrast.

Calories and nutritional benefits:

Each serving of spinach roll contains approximately 150-200 calories, depending on the specific ingredients used. Spinach is rich in vitamins A, C, and K, as well as essential minerals like iron, calcium, and magnesium. Cottage cheese adds a good source of protein, while ham provides extra flavor and taste.

Frequently asked questions:

1. Can I use another type of cheese?
Yes, you can experiment with other types of cheese, such as feta or ricotta, to achieve a different taste.

2. Can the roll be frozen?
It is recommended not to freeze the roll after it has been filled, but you can freeze the spinach sheet before filling it.

3. How can I adapt the recipe for a vegetarian version?
You can omit the ham and add sautéed vegetables or mushrooms for a delicious and hearty filling.
