The journey into a world of flavors is enriched with every recipe we try. Today, I invite you to discover together a delicious cheesecake, a dessert that perfectly combines the fluffy texture of cheese with a crunchy crust. This recipe is known as 'Rudy's Cake', and although we do not know the exact origin of the name, it is certainly a recipe that has won the hearts of many.

Preparation time: 20 minutes
Baking time: 30 minutes
Total time: 50 minutes
Number of servings: 12

Ingredients

Dough
- 400 g flour
- 250 g butter or margarine (choose a quality butter for better taste)
- 150 g sugar
- 1 egg yolk
- 1 packet baking powder
- 2 tablespoons cocoa (for a more intense flavor, opt for high-quality cocoa)

Cheese cream
- 750 g sweet cottage cheese (fresh cottage cheese provides the best texture)
- 3 eggs
- 2 packets vanilla sugar (or you can use regular sugar with vanilla essence)
- A drop of rum essence (for an extra flavor)
- Raisins (optional, but recommended for a sweet taste and interesting texture)
- 250 g sugar

Step by step - Preparing the cake

1. Preparing the dough: In a large bowl, combine the flour, baking powder, and cocoa. This mixture will form the base of the cake. Add the diced butter, sugar, and egg yolk. Knead the ingredients with your fingers or with a hand mixer until you obtain a homogeneous and malleable dough. It will have a pleasant and slightly elastic consistency.

2. Chilling the dough: Divide the dough into two equal parts. Wrap each part in plastic wrap and leave them in the freezer for 10-15 minutes. This step is essential to make the dough easier to grate and to keep its shape during baking.

3. Preparing the cheese cream: In the meantime, prepare the cheese cream. Whip the egg whites in a clean bowl until they become firm. In another bowl, mix the egg yolks with the sugar and flavors (vanilla sugar and rum essence). Add the cottage cheese and mix well. Finally, gently fold in the whipped egg whites using a spatula to maintain the airiness of the mixture.

4. Assembling the cake: Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper. Take the first part of the dough from the freezer and grate it on a large grater directly into the tray. Form an even layer. Pour the cheese cream over the grated dough, then grate the second part of the dough on top of the cream, completely covering it.

5. Baking: Bake the cake in the preheated oven for 25-30 minutes, or until the surface becomes slightly golden and the cake is well baked.

6. Cooling and serving: Let the cake cool completely in the tray, then dust it with sugar if desired. A delicious variant is to cover it with a chocolate glaze, which adds a pleasant contrast with the cheese.

Serving suggestions

Rudy's Cake is wonderful served warm, but also cold. I recommend pairing it with a scoop of vanilla ice cream or a portion of whipped cream. Also, a cup of tea or coffee pairs perfectly to complete this culinary experience.

Variations and tips

- Variations of ingredients: You can add crushed dark chocolate or ground nuts to the cheese cream for a more complex flavor. Also, instead of raisins, try using dried fruits or nuts for a different texture.
- Lactose-free options: If you want a lactose-free version, use lactose-free cottage cheese and lactose-free butter.
- Storing the cake: The cake keeps well in the refrigerator, covered, for 3-4 days, but I recommend consuming it within the first two days to maintain its freshness.

Nutritional benefits

This cheesecake provides a good source of protein due to the cottage cheese and eggs, and by adding cocoa, you also get antioxidants. Whole grain flour can be a healthy option, providing additional fiber. However, it is important to consume the cake in moderation, considering the sugar and fat content.

Frequently asked questions

- Why didn't my cake rise? It is possible that the dough was not cold enough or that you did not use enough baking powder. Make sure to use fresh ingredients.
- Can I use a different type of cheese? Of course! Ricotta or mascarpone cheese can add a different texture and creamy taste.
- How can I prevent the cake from falling after baking? Make sure the egg whites are well beaten and carefully fold them into the mixture.

Rudy's Cake is more than just a dessert; it is a memory of the joy of cooking and sharing special moments with loved ones. So gather your ingredients and let yourself be inspired by the aroma and taste of this cake. Enjoy!
