Preparation time: 30 minutes
Baking time: 25 minutes
Total time: 55 minutes
Number of servings: 12

Ingredients:
- 6 eggs
- 250 g butter (Pilos 82% fat is ideal)
- 40 g cocoa
- 200 g sugar
- 2 packets of vanilla sugar
- 70 g flour
- 1 packet of baking powder
- 2 vials of rum essence
- 200 ml liquid cream
- 160 g chocolate (Kandia 75% cocoa for an intense flavor)
- 100 g roasted and ground nuts
- 100 g plum jam
- 200 ml whipped cream
- chocolate sauce (for decoration)
- cherry syrup (for soaking)

Step by step for a perfect cake:

1. Prepare the bain-marie: Start by filling a pot with water and placing it on the heat. The water should not boil excessively, just be warm enough to melt the top ingredients.

2. Mixing dry ingredients: In a stainless steel bowl, combine 40 g cocoa with 150 g sugar. This mixture will create the sweet and intense base of our cake.

3. Adding cream: Pour the liquid cream into the bowl with cocoa and sugar. Mix well, then place the bowl over the pot of hot water. This is where the magic happens: the sugar and cocoa will melt and combine into a homogeneous mixture.

4. Including chocolate: Break the chocolate into pieces and add it to the mixture. Keep mixing until the chocolate completely melts. Here is the secret of the cake: quality chocolate makes the difference!

5. Incorporating egg yolks: Once the mixture is homogeneous, remove the bowl from the steam. Add the egg yolks one at a time, mixing quickly to avoid coagulation.

6. Preparing the egg white foam: In another bowl, beat the egg whites with a pinch of salt until a firm foam forms. Gradually add the remaining sugar (50 g) and continue mixing until the egg whites become glossy.

7. Combining ingredients: Divide the chocolate cream into two parts. In one part, add 70 g of flour and the baking powder, mixing well. Then, gently fold in the egg white foam with slow movements from bottom to top to maintain the airiness.

8. Baking the layers: Line a square pan (24x24 cm) with baking paper. Pour the mixture into the pan and place it in the preheated oven at 180°C for 25 minutes. Check if it's done with a toothpick test: if it comes out clean, the layer is perfectly baked!

9. Preparing the cream: While the layer is baking, mix the butter at room temperature. Add the rum essence and gradually the remaining chocolate cream, mixing well. Fold in the roasted nuts and plum jam to add a subtle flavor and extra texture.

10. Decorating the cake: Once the layer has completely cooled, cut it in half. Soak the first half with cherry syrup. Spread more than half of the chocolate cream over the first layer, then place the second layer on top.

11. Finishing: Spread the remaining chocolate cream on top and portion it. Decorate each slice with whipped cream mixed with the reserved 2 tablespoons of chocolate cream. Add a final touch with chocolate sauce on top.

Useful tips:
- Choose quality ingredients: Good quality chocolate will make the cake shine and have a deep flavor.
- Using nuts: If you're not a fan of nuts, you can replace them with ground almonds or omit them completely.
- Gluten-free option: You can use gluten-free flour to adapt the cake for those with intolerances.
- Serving: It pairs wonderfully with a scoop of vanilla ice cream or a cup of aromatic coffee.

Frequently asked questions:
1. Can the cake be frozen? - Yes, you can freeze the cake, but make sure it's well covered to avoid absorbing odors from the freezer.
2. Can I use white chocolate? - Of course! White chocolate will bring a different sweetness, but it will change the final taste of the cake.
3. How can I replace sugar? - You can use natural sweeteners like honey or maple syrup, but adjustments may vary the taste and texture.

This chocolate cake brings sincere joy and is perfect for sharing with loved ones. Whether you prepare it for a special occasion or simply to indulge yourself, the result will always be delicious. So, get ready to enjoy a slice of happiness!
