Mini pizza
The dough for these delicious appetizers is prepared with great care to achieve a fluffy texture and a perfect taste. We start by preparing the leaven, an essential element that will give life to our dough. In a medium bowl, fresh yeast is placed, which is well rubbed with sugar, making sure that the latter dissolves completely. Once the mixture becomes homogeneous, we add warm milk, not hot, so as not to destroy the yeast. After that, two tablespoons of flour are incorporated, mixing with a wooden spoon or spatula until a uniform composition is formed. This mixture is covered with a clean towel and left to rise in a warm place, away from drafts, until it doubles in volume, a process that can take between 30 and 60 minutes.
When the leaven is ready, it is placed in a larger bowl, where we will begin to add flour. Gradually, we start incorporating the flour along with the oil, mixing continuously to obtain a homogeneous dough. Finally, salt is added, being careful not to put it directly on the yeast so as not to inhibit the fermentation process. The resulting dough should be slightly elastic and not too hard. We form a ball from the dough and let it rise, covered, to develop again in a warm place for about 40 minutes.
After the dough has risen, it is time to assemble the appetizers. We prepare a tray lined with baking paper, making sure it is well secured. We roll out the dough on a floured surface to a thickness of about 1 cm, then use a glass or a round cutter to cut out equal-sized circles. Each circle obtained will be filled with our favorite ingredients. On each circle, we place a thin slice of well-ripened tomato, a slice of flavored ham, a slice of olives, and a slice of bell pepper, which adds a touch of sweetness and color. Finally, we don’t forget to generously sprinkle grated cheese, which will melt and form a delicious crust.
After assembling all the circles on the tray, we place the tray in the preheated oven at 180 degrees Celsius. We let the appetizers bake for 20-25 minutes or until they become golden and appetizing. The aroma that will spread throughout the house will surely make you want to savor them as soon as possible. Once they are ready, let them cool slightly before serving on a platter, where they will certainly be the stars of any meal!
Ingredients: Dough: 12 g yeast; half a teaspoon of sugar; 100 ml warm milk; approximately 200 g flour; approximately 50 ml oil; salt. Topping: 23 elongated slices of tomato; 50 g smoked country ham; 50 g cheese; two olives; half a bell pepper.
