- 500 g chicken (preferably boneless breast or thighs)
- 1 red bell pepper
- 1 green bell pepper
- 1 large onion
- 1 can of mushrooms (about 400 g)
- 2 cups whole wheat flour

Step 1: Preparing the ingredients
Start by preparing all the ingredients. Cut the chicken into small pieces, about 2 cm, for even cooking. The vegetables will add not only color but also a perfect taste. Chop the onion and bell peppers finely, and you can leave the mushrooms whole or slice them thinly, depending on your preference.
Step 2: Sauté the chicken and vegetables
Heat a non-stick skillet (teflon) over medium heat. Add a little oil (olive or sunflower) and, once heated, add the chopped chicken. Sauté the chicken for 5-7 minutes until golden. Add the onion, red and green bell peppers, then the mushrooms. Continue cooking for another 5-10 minutes, stirring occasionally. Season with salt and basil to taste.
Step 3: Preparing the dough
In a large bowl, mix the whole wheat flour with the wheat bran. Gradually add a little warm water, mixing until you get a smooth dough. It should be slightly elastic but not sticky. Divide the dough into two parts: one larger for the base of the pie and one smaller for the top.
Step 4: Assembling the pie
Roll out the first piece of dough on a lightly floured surface. Make sure it is larger than the baking dish you are using to cover the edges. Place the dough in the greased dish, letting the excess dough hang over the edges. Add the chicken and vegetable filling, then grate the cheese on top. Roll out the second piece of dough and cover the filling, sealing the edges well to prevent the filling from leaking during baking.
Step 5: Baking
Preheat the oven to 180°C. Bake the pie for 45 minutes or until golden and crispy. It is important not to open the oven in the first 30 minutes of baking to allow the pie to rise evenly.
Step 6: Serving
Once the pie is baked, let it cool for a few minutes before cutting. Serve warm, alongside a fresh salad for a contrast of textures and flavors. If you want a special touch, you can add a few fresh basil leaves on top before serving.
