So, get ready for a culinary adventure that will take you down the delightful path of eclairs!

Total preparation time: 2 hours
Preparation time: 30 minutes
Baking time: 30-40 minutes
Number of servings: 10-12 eclairs

Ingredients

For the eclair shells:
- 300 ml water
- 200 g flour
- 75 g oil
- 6 eggs (medium size)
- a pinch of salt
- a pinch of sugar

For the vanilla cream:
- 1 liter milk
- 6 egg yolks
- 6 tablespoons brown sugar (or to taste)
- 6 tablespoons cornstarch
- vanilla extract (to taste)
- 50 g butter
- 500 ml cold liquid cream (from the fridge)
- 1 packet of cream stabilizer

Decoration:
- 100 g milk chocolate

Step by step for the eclair shells

1. Preparing the dough:
In a saucepan, add water, oil, salt, and sugar. Place the saucepan over medium heat and wait for it to reach a boiling point. When the water starts to boil, add all the flour at once. Quickly mix with a whisk until the dough pulls away from the sides of the saucepan. This step is crucial, as a proper incorporation of the flour will ensure the perfect texture of the eclairs.

2. Cooling the dough:
Once the dough is ready, let it cool completely. It is important not to add the eggs to the warm dough, as they will cook and will not allow the eclairs to rise beautifully.

3. Adding the eggs:
After the dough has cooled, add the eggs one by one, mixing well after each addition. If the dough forms a peak when placed in a piping bag, it's ready! You may not need all 6 eggs, depending on their size.

4. Shaping the eclairs:
Preheat the oven to 210 degrees Celsius. Use a piping bag to form the eclair shells on a baking tray lined with parchment paper. Make sure to leave enough space between each eclair, as they will expand during baking.

5. Baking:
Place the tray in the preheated oven and bake for 15-20 minutes at medium to high heat. After this time, reduce the temperature to medium and let them bake for another 10 minutes. In the last 5-10 minutes, slightly open the oven door to allow steam to escape. This step is essential to prevent the eclairs from collapsing.

Preparing the vanilla cream

1. Mixing the ingredients:
In a bowl, mix the egg yolks with the sugar until the latter is completely dissolved. Gradually add the cornstarch and a little milk, mixing well to avoid lumps.

2. Cooking the cream:
Add the remaining milk and place the pot over low heat. Continuously stir to prevent the cream from sticking to the bottom of the pot. When the mixture thickens, it's ready! Remove from heat and add the vanilla extract and butter. Stir until the butter completely melts.

3. Cooling the cream:
Allow the cream to cool completely. In the meantime, you can prepare the whipped cream.

Assembling the eclairs

1. Preparing the whipped cream:
Ensure that the liquid cream has been in the fridge for at least 2-3 hours. Whip it together with the stabilizer until it becomes firm. Put the whipped cream back in the fridge until ready to use.

2. Assembly:
Cut the eclair shells in half horizontally. On one half, add a layer of vanilla cream, then cover with the other half. You can add a layer of whipped cream on top, then arrange small eclair shells filled with cream, alternating with whipped cream.

3. Decorating:
Melt the chocolate in a bag held in warm water. Cut the tip of the bag and decorate the cake with melted chocolate. Place the dessert in the fridge for a few hours to set.

Useful tips

- Oven testing: Every oven bakes differently, so it's essential to know your oven. If you see that the eclairs are browning too quickly, reduce the temperature.
- Perfect eclairs: The dough should be smooth and elastic, and the eclairs should have a nice shape. If they don’t rise properly, check if you followed the cooling and egg-adding steps correctly.
- Cream variations: You can replace the vanilla cream with chocolate cream or coffee flavor, depending on your preferences.

Serving combinations

Eclairs pair perfectly with a cup of aromatic coffee or a fruit tea, providing you with a complete culinary experience. You can also try serving them with vanilla ice cream for a decadent dessert. Eclairs can even be included on a dessert platter alongside other delights like fruit tarts or mousses.

Nutritional benefits

Eclairs, although a rich dessert, can also offer nutritional benefits due to the ingredients used. Milk provides calcium, and eggs are an excellent source of protein. However, it's best to consume them in moderation, considering the sugar and calorie content.

Frequently asked questions

1. Can I make eclairs gluten-free?
Yes! You can replace wheat flour with gluten-free flour, but make sure to check the proportions, as they may vary.

2. Can I store eclairs?
Eclairs are best enjoyed fresh. If any remain, store them in the fridge, but consume them within 2-3 days to enjoy their crispy texture.

3. What can I use instead of butter in the vanilla cream?
You can use margarine or a vegan butter, depending on your dietary preferences.

Eclairs will surely bring joy to everyone who tastes them. I wish you great success in making this classic dessert, and may each bite bring you a smile!
