Ingredients:
For the dough:
- 500 g flour
- 300 ml warm water
- 10 g dry yeast or 25 g fresh yeast
- 2 teaspoons salt
- 1 teaspoon sugar
For the filling:
- 700 g potatoes
- 2 tablespoons oil
- Salt and pepper, to taste
Preparation:
1. Preparing the dough: In a large bowl, add the flour, yeast, salt, and sugar. Mix the dry ingredients well to combine. Make a well in the center of the mixture and gradually pour in the warm water, stirring with a wooden spoon. This step is essential to achieve a uniform dough.
2. Kneading the dough: Once the water is incorporated, knead the dough for about 5-10 minutes until it becomes elastic and smooth. If the dough is too sticky, add a little more flour, but avoid overdoing it; a dough that is too dry will result in tough pies.
3. Proofing the dough: Cover the bowl with a damp towel or plastic wrap and place it in a warm spot to rise for about 1 hour, or until it doubles in size.
4. Preparing the filling: Meanwhile, prepare the filling. Peel the potatoes, cut them into cubes, and boil them in a pot of salted water. Cook until very soft, about 15-20 minutes. After boiling, drain well and mash them as for puree. Add oil, salt, and pepper to taste, mixing well.
5. Assembling the pies: Once the dough has risen, divide it into 6 equal pieces. On a surface sprinkled with a little flour or greased with oil, roll each piece into a thin rectangle. On half of each sheet, place a layer of potato filling, leaving the edges free. Fold the other half over the filling and press the edges well to seal the pie.
6. Frying the pies: In a deep pan, add enough oil to fry the pies. Heat the oil over medium heat. Fry each pie on both sides until golden and crispy, about 3-4 minutes on each side. Use a spatula to carefully turn them.
