Crash Potatoes
To prepare a delicious recipe for oven-crushed potatoes, we start by selecting quality potatoes, preferably of the 'Yukon Gold' or 'Red' type, which have a creamy texture and enhanced flavor. We begin by washing them well under a stream of cold water to remove any impurities or dirt. Next, we place them in a large pot with cold water, adding a teaspoon of salt to enhance the flavor. We boil the potatoes over medium to high heat, letting them cook for 20-25 minutes until they become soft but not so much that they fall apart.
Once the potatoes are boiled, we carefully drain them and let them cool for a few minutes to avoid burning ourselves. We place the potatoes on a baking tray lined with parchment paper so they don’t stick and roast evenly. Now comes the fun part: using a potato masher, we crush each potato with a gentle motion, being careful not to turn them into mashed potatoes but to keep a rustic texture.
After crushing all the potatoes, we generously drizzle them with extra virgin olive oil so they develop a crispy crust during baking. We season each potato with salt, freshly ground pepper, and for an extra flavor boost, we can add herbs like rosemary or thyme. We cover the tray with aluminum foil and place it in the preheated oven at 200 degrees Celsius for about 20 minutes.
In the last 5 minutes of baking, we remove the foil and add a cube of butter and one of cheese on each potato. The butter will melt and seep into the potato, while the cheese will melt and form a golden and delicious crust. The potatoes are ready when they turn brown and crispy on the surface, and the aroma of butter and cheese perfectly blends with that of the potatoes.
