Then, boil the beet in a pot of salted water for about 30-40 minutes until it becomes soft, but do not overdo the time to avoid losing nutrients. Once the beet is boiled, let it cool, then carefully peel it and cut it into small cubes.

In a generous bowl, add the cubes of red beet and finely chop a medium onion, preferably white or red, depending on your preference. The onion will add a crunchy note and a slightly spicy flavor to the salad. Then, finely chop a handful of fresh parsley, which will bring a fresh aroma and vibrant color to the dish. Gently mix all these ingredients so that they combine harmoniously.

Next, add the cottage cheese, which will provide creaminess and a delicate taste to the salad. It is important to add it in the right amount, about 200-250 grams, and to do it carefully without crumbling it too much to preserve its slightly grainy texture. Now it’s time to season the mixture with salt and freshly ground pepper, adjusting the amount according to your taste.

To complete the dish, add a few tablespoons of extra virgin olive oil, which will not only enrich the flavor but also provide a health boost. After adding the oil, gently shake the bowl to homogenize the ingredients without destroying them.

Once you have finished preparing the salad, cover the bowl with cling film or a lid and let it chill in the refrigerator for at least an hour. This resting time allows the flavors to blend and intensify.
