Ingredients

For the layers (two layers):
- 8 eggs (4 eggs for one layer, but we want two layers)
- 8 tablespoons sugar
- 8 tablespoons flour

For the cream:
- 500 ml liquid cream
- 300 g chocolate (preferably dark chocolate for a special contrast)
- 150 g roasted nuts and almonds (all ground)
- 1 jar sour cherry jam (ideally with whole fruits)

For the syrup:
- 200 ml water
- 2 tablespoons sugar
- Almond extract (you can use rum extract if you prefer)

Preparation

Step 1: Preparing the layers
We start by preparing the layers. In a large bowl, separate the egg whites from the yolks. Beat the egg whites until stiff and glossy using a mixer. Gradually add the sugar, continuing to mix until it completely dissolves and you achieve a firm meringue. It is essential that the sugar is well incorporated; otherwise, the cake will not have the same airy structure.

Then add the yolks, gently folding them in from the bottom up with a spatula to avoid losing the air in the mixture. Gradually add the sifted flour in the same manner, mixing gently until fully integrated.

Step 2: Baking the layers
Line a baking tray with parchment paper. Pour the mixture into the tray and level the surface with a spatula. Bake in a preheated oven on the second rack at low heat for about 12 minutes or until the edges turn slightly golden.

After baking, let the layer cool slightly, then carefully peel off the parchment paper. Roll the layer using a clean towel, and if you didn't succeed with the damp towel, don't worry! You can roll it simply, but make sure to handle it gently.

Step 3: Preparing the cream
For the cream, melt the chocolate in 350 ml of the liquid cream over very low heat or in the microwave. Once the chocolate is melted and cooled, place the mixture in the refrigerator for about 2 hours. This will help achieve an exceptionally airy cream.

After the cream is well chilled, whip it with a mixer until it becomes firm. Then add the remaining cream, gently folding it in with a spatula. Reserve one-third of the cream for decoration, and into the rest of the cream, add the ground nuts and almonds. These will add extra texture and flavor.

Step 4: Assembling the cake
Unroll the layer, soak it with the syrup made from water and sugar (optionally, you can add almond extract for a refined taste). Moisten the layer and spread half of the sour cherry jam on it. Then, spread half of the cream with nuts and almonds over the jam. Carefully roll the layer to form a log.

Repeat the process for the second layer. After you have made the second log, cut it in half diagonally and place the two pieces on either side of the first log.

Step 5: Decorating
With the reserved cream, generously frost the logs. Use a fork to create ridges on the surface of the cake, mimicking tree bark. This will give a rustic yet elegant appearance and add a special charm to your cake.
