Strawberry Mousse Cake
To prepare a delicious strawberry mousse cake, we will start with the preparation of the base. In a large bowl, we beat the egg whites with an electric mixer for about 5 minutes, until we obtain a firm and shiny foam. In another bowl, we mix the egg yolks with the sugar until the latter completely dissolves, a process that takes between 3 and 4 minutes. We then add the melted butter, gently mixing to incorporate it.
Now is the time to add the dry ingredients. We start with half of the flour, which we mix with the baking powder. After we have integrated the flour, we pour in the milk and continue with the rest of the flour and the vanilla extract. It is important to mix gently to avoid deflating the egg whites, which will add volume and airiness to our base. We fold in the beaten egg whites in about 4 batches, using a spatula and mixing carefully from the bottom up.
Once we have obtained a homogeneous batter, we pour the mixture into a silicone or removable wall baking pan that has been lightly greased with butter or lined with parchment paper. We preheat the oven to 160 degrees Celsius and bake the base for 35-40 minutes. Once baked, we let the base cool completely, then cut it in half, resulting in two equal layers.
For the strawberry mousse, we start by turning the strawberries into a fine paste using a blender. Meanwhile, we soak the gelatin in cold water. We whip the cream for the whipped cream with the sugar until it becomes firm, then we add the strawberry paste and the melted gelatin (which has been heated in a double boiler or microwave). It is essential to ensure that the gelatin does not boil, so we heat it carefully, adding a tablespoon of water if necessary.
For assembly, we place a plastic wrap in the pan where we baked the base. We put the first layer and spread half of the strawberry jam on it. We pour the mousse over it, and then spread the remaining jam on the second layer and place it on top. We cover the cake with plastic wrap and let it chill in the refrigerator for at least 4 hours to set the mousse.
For the glaze, we heat the cream over medium heat. When it comes to a boil, we add the chopped chocolate and stir continuously until it completely melts. Finally, we add the honey and let the mixture chill in the refrigerator for 5 minutes, so it thickens slightly. The glaze will spread evenly over the cake, starting from the center and working towards the edges, to achieve a uniform and elegant appearance. After the cake has been glazed, we transfer it to a serving platter and decorate it with chocolate ornaments on the sides and whipped cream on top, using a piping bag for a refined look. Enjoy!

Glaze: 100 ml whipping cream, 100 g dark chocolate, 1 tablespoon agave syrup or honey. Decoration: 100 ml whipping cream, one tablespoon sugar (pink food coloring - optional), decorative candies.
