Preparation

Step 1: Preparing the sponges

1. Plain sponge:
- In a large bowl, separate the egg whites from the yolks. Add a pinch of salt to the egg whites and beat with a mixer until stiff peaks form. Gradually add the sugar and continue mixing until the mixture becomes glossy.
- Incorporate the yolks and mix on low speed. Sifting the flour is essential to avoid lumps, so add it gradually, folding gently with a spatula.
- Pour the mixture into a baking pan (preferably lined with parchment paper) and gently tap the pan on the table to break any air bubbles.
- Bake the sponge at 160°C for about 15 minutes. After baking, let it cool slightly in the oven with the door ajar, then transfer it to a wire rack to cool completely. Cut it in half to obtain two vanilla sponges.

2. Cocoa sponge:
- Follow the same procedure as for the plain sponge, but this time use the ingredients for the cocoa sponge. Mix the eggs, sugar, flour, cocoa, and a pinch of salt. Bake it the same way as the plain sponge.
