Discover a mixed salad with avocado, perfect for warm days or as a delicious side dish for meals with friends. This simple recipe combines fresh vegetables with your favorite cold cuts, offering an explosion of flavors and textures. Plus, avocado adds a creamy note, rich in healthy fats. Here’s how to prepare it step by step.
Ingredients:
- 1 head of lettuce
- 1 ripe avocado
- 1-2 bunches of green onions (or more if you prefer a stronger taste)
- 200 g bacon or smoked pork breast (or any other type of smoked meat you prefer)
- 200 g chicken ham (or assorted cold cuts like salami or ham)
- 3 boiled eggs
- 1 can of corn (about 300 g)
- 3-4 cherry tomatoes (or regular tomatoes, diced)
- 1 cucumber (sliced or diced)
- Salt and olive oil to taste
Instructions:
1. Preparing the ingredients: Start by washing all the vegetables under cold running water. Make sure the lettuce is well dried to avoid diluting the dressing. The bacon or smoked breast can be fried in a pan until crispy, but you can also use cold meat, depending on your preference.
2. Boiling the eggs: Place the eggs in a pot with cold water. Boil them for 9-12 minutes, then transfer them to cold water to stop the cooking process. Once cooled, peel and cut them into quarters.
3. Cutting the vegetables: Cut the lettuce into large pieces, the green onions into thin slices, the cherry tomatoes in halves, and the cucumber into slices. The avocado should be halved, the pit removed, and sliced or diced, depending on your preference.
4. Assembling the salad: In a large bowl, combine all the cut vegetables: lettuce, avocado, green onions, drained corn, tomatoes, and cucumber. Add the bacon or smoked breast and chicken ham cut into small pieces.
5. Dressing: Drizzle the salad with olive oil to taste and sprinkle with salt. Gently mix to avoid crushing the avocado and to maintain the salad's crunchy texture.
6. Finalizing: Place the boiled eggs on top of the salad for an attractive look. You can garnish with a few fresh parsley leaves or a slice of lemon for an extra touch of freshness.
Helpful tips:
- You can also add other ingredients like olives or feta cheese to diversify the flavors.
- If you prefer a protein-rich salad, you can add canned tuna or boiled chickpeas.
- Replace olive oil with a yogurt-based dressing for a lighter version.
Serving: This mixed salad with avocado is perfect as a main dish or as a side. It can be enjoyed immediately or stored in the fridge to be consumed later. It’s a versatile recipe, ideal for a quick lunch or a healthy dinner.
