The nettle roll is a simple and tasty recipe, perfect for spring when nettles are fresh and full of nutrients. Ingredients:
- 4-5 large eggs
- 300 g cheese (you can use cottage cheese, feta cheese, or telemea cheese, depending on your preferences)
- 1 bunch of green onions
- 1 white onion
- A generous handful of nettles (about 200 g)
- 1 bunch of fresh dill
- White pepper, to taste
- A few cloves of garlic (optional)
Step 1: Preparing the nettles
The first step in this recipe is cleaning the nettles. Use gloves to avoid stings. Tear the nettle leaves from the stems and wash them very well, 4-5 times, in cold water to remove any impurities. After you are done, let them drain well.
Step 2: Cooking the nettles
In a pot of boiling salted water, add the nettles and let them boil for 2-3 minutes until they become soft. Drain the nettles and let them cool slightly, then chop them finely.
Step 3: Preparing the mixture
In a large bowl, beat the eggs with a pinch of salt and white pepper, then add the chopped nettles, crumbled cheese, chopped green onions, sautéed white onion (for a sweeter taste), chopped dill, and, if you like, a few crushed garlic cloves. Mix all the ingredients well until homogeneous.
Step 4: Baking the roll
Preheat the oven to 180°C (350°F). Take a baking tray and line it with parchment paper or grease it with oil. Pour the egg and nettle mixture into the tray and level the surface. Bake the roll for 25 minutes or until it becomes golden and well set.
Step 5: Cooling and serving
After removing the roll from the oven, let it cool for 10 minutes in the tray, then you can turn it out onto a platter. Cut the roll into slices and serve it warm or at room temperature. It is delicious both on its own and alongside a fresh salad or yogurt sauce.
A personal note: If you want to add extra flavor, you can also include some chopped black or red olives in the mixture. These will give your roll a Mediterranean touch.
Possible variations: Instead of cheese, you can use smoked telemea for a more intense flavor or even a mix of cheeses for a more complex texture. You can also replace the nettles with spinach or turnip greens, depending on the season and availability.
