Tuscan Chicken
Boneless thighs, carefully washed and dried, serve as the perfect base for a delicious recipe. To prepare them, we start by thinning them out in the thicker parts, which will ensure even cooking and a more pleasant texture. Once prepared, they are generously seasoned with salt and pepper, and a sprinkle of dehydrated vegetables will enhance their flavor. These spices will add a burst of taste, transforming the thighs into a delicacy.
Meanwhile, we focus on the filling. Nutrient-rich spinach leaves are boiled in salted water for about 5 minutes. This step will not only make them softer but also preserve the vibrant color of the spinach. After boiling, they are well-drained and rinsed under cold water, a process that will stop the cooking and maintain that appetizing green hue.
The part of the recipe that will add a touch of freshness is preparing the puree. Parsley, washed and cleaned to keep only the leaves, is added to the blender along with the drained spinach. Add 2 tablespoons of olive oil, a pinch of salt, a few crushed garlic cloves, and 2 tablespoons of dry white wine. We blend everything until we obtain a smooth, vibrant paste that will fill the thighs with delicious flavors.
Each piece of thigh is brushed with this green paste, and then carefully rolled up, making sure not to spill the filling. Each roll will be secured with two bamboo toothpicks, ensuring the filling stays well enclosed. Next, we place the rolls in a baking dish, side by side, ready to be baked.
To intensify the flavor, they are drizzled with the remaining wine and water, along with a pinch of salt and a tablespoon of olive oil. Bay leaves, known for their unmistakable aroma, will perfectly complement the dish. The oven should be preheated to a medium temperature, and the thigh rolls bake for about 30 minutes until they become golden and appetizing.
After the baking time is up, the rolls are removed from the dish, and the toothpicks are carefully taken out. This dish can be served alongside a side of grilled vegetables or a fresh salad, bringing a touch of health and flavor to your table.
