### Ingredients

For the dough:
- 1 kg + 200 g flour
- 1 packet of dry yeast
- 1 package (200 g) butter
- 1 egg
- 3 tablespoons oil
- 100 ml milk
- 600 ml warm water
- 1 packet of vanilla sugar
- Grated zest of 1 lemon

For the filling:
- 700 g salty cheese (telemea)
- 3 eggs
- 1 cup of sugar
- 1 packet of rum essence

For the syrup:
- 1 cup of sugar
- 2 cups of water
- 1 packet of vanilla essence

For sprinkling:
- 1 cup of sugar

### Instructions

1. Preparing the Dough:
In a large mixing bowl, add 1 kg of flour and the dry yeast. Mix the dry ingredients well, then add the vanilla sugar and lemon zest.

2. Adding Wet Ingredients:
Make a well in the middle of the flour mixture and add the egg. Gradually pour in the warm water while continuously mixing. Once all the water is incorporated, add the milk and melted butter, mixing until you obtain a homogeneous dough.

3. Kneading the Dough:
Knead the dough for about 10 minutes. If necessary, add a little flour to prevent sticking to your hands. Once the dough is elastic and smooth, cover it with a damp towel and let it rise in a warm place until it doubles in volume (about 30-40 minutes).

4. Preparing the Filling:
Meanwhile, prepare the filling by mixing the salty cheese (telemea) with the eggs and sugar, adding the rum essence for extra flavor.

5. Assembling the Invartita:
After the dough has risen, divide it into two equal parts. Roll out the first sheet on a floured surface, brush it with oil, and sprinkle sugar over the entire surface. Add half of the cheese filling, then roll the sheet tightly. Form a spiral by pinching the dough from the middle and twisting it, so the bottom part comes on top. Repeat the process with the second sheet.

6. Baking:
Prepare a baking tray with parchment paper and place the invartita in the tray. Preheat the oven to 180°C and bake the invartita for 60 minutes.

7. Preparing the Syrup:
In the last 10 minutes of baking, prepare the syrup by caramelizing the sugar and extinguishing it with water. Let it boil for a few minutes, then add the vanilla essence.

8. Finishing:
With 10 minutes left before removing the invartita from the oven, pour the warm syrup over the pie. If it is not golden enough, let it bake for another 10 minutes.
