Preparation time: 30 minutes
Baking time: 50 minutes
Total time: 1 hour and 20 minutes
Number of servings: 12 servings

Ingredients

For the cake:
- 2 large eggs
- 175 g sugar
- 2 tablespoons honey
- 3 tablespoons oil (preferably sunflower oil)
- 60 g margarine (like Rama, at room temperature or melted and cooled)
- 1 cup (approx. 250 ml) milk
- 250 g flour
- 1 packet baking powder (Dr. Oetker is an excellent choice)
- 50 g ground walnuts (optional)

For the glaze:
- 150 g sugar
- 13 tablespoons milk
- 2 tablespoons cocoa
- 100 g milk chocolate
- 60 g margarine (from the same block of Rama)

Instructions

Step 1: Preparing the batter

1. Beat the eggs and sugar: In a large bowl, add the 2 eggs and 175 g sugar. Use a mixer or whisk to mix well until you achieve a fluffy and light-colored mixture.

2. Incorporate honey, oil, and margarine: Add the 2 tablespoons of honey, 3 tablespoons of oil, and 60 g margarine. If the margarine is solid, ensure it is at room temperature or melted and cooled. Mix well until combined.

3. Add the milk: Gradually incorporate 250 ml of milk, continuing to mix to achieve a uniform mixture.

4. Incorporate the dry ingredients: In another bowl, mix 250 g of flour with 1 packet of baking powder. Add the flour mixture to the wet mixture and, if desired, add the ground walnuts. Gently mix with a spatula or with the mixer on low speed until combined.

5. Beat the egg whites: In another bowl, beat the egg whites until soft peaks form. This step will give the cake a fluffy texture.

6. Fold the egg whites into the batter: Use a spatula to gently fold the beaten egg whites into the cake mixture. Mix carefully to avoid losing the air in the egg whites.

Step 2: Baking

7. Prepare the pan: Grease a smaller baking pan than the oven (approximately 20x30 cm) with margarine and line it with parchment paper.

8. Pour the batter into the pan: Once the batter is ready, pour it into the prepared pan and level the surface with a spatula.

9. Bake the cake: Preheat the oven to 180°C (medium heat) and bake the cake for about 50 minutes. Check occasionally with a toothpick; if it comes out clean, the cake is done. Baking time may vary depending on the oven.

10. Cooling: After the cake is baked, let it cool in the pan for about 15 minutes, then transfer it to a wire rack to cool completely.

Step 3: Preparing the glaze

11. Boil the glaze ingredients: In a saucepan, add 150 g sugar, 13 tablespoons of milk, 2 tablespoons of cocoa, and 100 g of chopped chocolate. Place over medium heat and stir constantly. Let it boil for a few minutes until the mixture becomes smooth and starts to boil.

12. Add the margarine: Once you have a smooth glaze, add 60 g of margarine and mix well.

Step 4: Assembling the cake

13. Pour the glaze: After the cake has cooled completely, cut it into suitable pieces directly in the pan. Pour the hot glaze over the cake, ensuring it evenly covers the surface and seeps between the layers.

14. Decorating: On top, sprinkle colorful candies or ground walnuts, as preferred, for a festive look.

15. Let the cake rest: Allow the cake to rest at room temperature, preferably until the next day, to allow the glaze to absorb well into the cake.

Practical tips

- For an intense flavor, use dark chocolate instead of milk chocolate in the glaze. This will provide a deeper and richer note.
- If you want a gluten-free version, you can replace regular flour with almond flour or a gluten-free flour blend.
- For a special aroma, add a teaspoon of vanilla extract to the batter.
- Storing the cake: It can be kept at room temperature in an airtight container for a few days. The glaze will remain soft and delicious.

Nutritional benefits

This chocolate glazed cake offers a good source of carbohydrates from sugar and flour, as well as healthy fats from oil and margarine. Although it is a dessert, an ingredient like honey adds a boost of antioxidants. Additionally, nuts provide essential fatty acids and protein.

Frequently asked questions

- Can I replace margarine with butter? Yes, you can use unsalted butter instead of margarine. The flavor of the cake will be richer.
- What type of chocolate should I use? Choose a good quality chocolate for a more flavorful glaze. Dark chocolate will provide a pleasant contrast to the sweetness of the cake.
- Is the cake suitable for vegans? This recipe contains eggs and milk, but you can replace them with vegan alternatives, such as almond milk and an egg substitute.

Serving

The chocolate glazed cake can be served plain or with a scoop of vanilla ice cream on the side. A cup of coffee or a fragrant tea perfectly complements this sweet experience. Enjoy every bite and cherish the moments spent with loved ones!
