Pickled Beetroot

 Ingredients: 4 kg of red beet, 1 piece of horseradish (about 250 g), 2 bay leaves, 2 teaspoons of cumin seeds, 1 teaspoon of peppercorns, a few tarragon leaves (3-4), 2 cups of vinegar, 6 cups of water, salt to taste

I harvested the red beet, carefully choosing large bulbs but without any white fibrous roots, to ensure a fine texture and pleasant aroma. After gathering the beets, I washed them with cold water, removing any impurities and dirt. I placed the beets in a large pot, covering them completely with water. I put the pot on the stove and let it boil. It is important to check the beets, and when the fork easily pierces them, you know they are cooked. After boiling, I took the beets out of the water and let them cool completely.

In the meantime, I moved on to preparing the horseradish. This can be quite a spicy part of the recipe, but it significantly contributes to the final flavor. The horseradish was carefully peeled and then grated, resulting in a fine paste that will add an unmistakable taste to the dish. This was my husband’s task, who did it patiently, aware of the importance of horseradish in this recipe.

Once the beets had cooled, I peeled them and then sliced them thinly, which will form the delicious layers in the jar. I took a 5 kg jar and began arranging the ingredients. I placed the slices of beet and horseradish in alternating layers, making sure to blend the flavors and colors. Meanwhile, a fragrant solution made of water, peppercorns, cumin seeds, and tarragon leaves was boiling on the stove. This combination will add extra flavor to the pickles.

When the water started to boil, I turned off the stove and let the solution cool slightly. Then I adjusted the taste with salt, so that it would be perfectly balanced. After obtaining a fragrant and salty solution, I carefully poured it over the beets and horseradish in the jar, using a strainer. I ensured an even coverage to allow the flavors to infuse. Finally, I placed the lid on the jar, preparing it for a marinating period that will lead to a delicious final result. This dish will gradually transform into a delicacy, perfect to be served as a side dish or appetizer.
