Preheat the oven to 175°C (350°F), setting the stage for a delicious and comforting recipe. We start by lightly frying the kaiser, being careful not to make it too crispy, but to keep it soft and juicy. Once fried, remove the kaiser from the pan, but not before retaining the fat left behind, which will add a special flavor to our dish. Next, add a little oil to the pan and sauté the sliced leeks, accompanied by the grated carrot, which will bring a sweet note and a pleasant texture to the dish.

If you have vibrant colored bell peppers, such as red or orange, either fresh or frozen, now is the perfect time to add them. Sauté the vegetables until they become tender and release their aromas, then season with salt and pepper, keeping in mind that the cheese you will add later will contribute additional flavor. After the vegetables have been sautéed, let them cool slightly. When the temperature is more bearable, add the four egg yolks, sour cream, flour, grated cheese, and finely chopped herbs. At this stage, adjust the taste again with pepper and salt if you feel it's necessary.

An essential step to achieve a fluffy texture is to beat the egg whites until stiff peaks form. Then, gradually add them, gently folding from the bottom up to keep the air in the foam. This technique will ensure that the final dish will be airy and light. The resulting mixture is poured into a pan lined with breadcrumbs or flour, prepared for the oven. Bake for 35-40 minutes, or if you opt for smaller forms, they will bake in about 10 minutes, becoming golden and appetizing.

For those who prefer a greener version, the recipe can be adapted with raw spinach (about 1 kg), which is sautéed together with the onion and kaiser before being chopped and mixed with the rest of the ingredients. A delicious combination that can include two stalks of leeks and a bunch of fresh (300 g) or frozen spinach will add more color and nutrients. This recipe is not only versatile but also extremely tasty, perfect for a family dinner or a savory lunch with loved ones. Enjoy every bite!
