Recipe for making papanasi
To prepare some delicious papanasi, we need a few essential ingredients and a bit of patience in the preparation process. We start by mixing well-drained cottage cheese with egg yolks, sugar, and a pinch of salt. This mixture will become the tasty base of our papanasi. If you desire a more aromatic flavor, you can also add grated lemon zest, which will give a fresh and pleasant aroma.
We continue by incorporating about 180 g of flour and baking soda into the cheese mixture. The baking soda will help the dough rise, making the papanasi fluffier. It is important to knead the dough well so that the ingredients combine evenly. Once we have obtained a homogeneous mixture, we will add the beaten egg whites. This step is crucial because the beaten egg whites will give the airy and soft consistency of the papanasi.
After incorporating the egg whites, we will gradually add the remaining flour, continuing to knead until the dough becomes elastic and easily comes off our hands. It is essential not to add too much flour, as the papanasi could become too dense. Once the dough is ready, we form medium-sized doughnuts. In the center of each doughnut, we make a small hole to create the characteristic shape of the papanasi. We can also shape smaller balls that will serve as lids.
The next step is frying the papanasi. In a pan, we heat the oil over moderate heat to ensure that the papanasi fry evenly, not just on the surface. Once the oil is hot enough, we carefully add the doughnuts, being careful not to overcrowd the pan. We fry them until they become golden and crispy on all sides, then remove them onto an absorbent paper towel to eliminate excess oil.
In addition to the fried version, I also tried a baked version, which turned out to be just as tasty. The papanasi can be served warm, dusted with sugar, alongside sour cream and jam, to create an unforgettable culinary experience.
