The simple version of this recipe is extremely accessible and perfect for those who want to quickly prepare a delicious dessert. We start by cracking the eggs into a large bowl, making sure no shells remain. Using a mixer, we beat them well until they become frothy and homogeneous. Then, we gradually add the sugar, continuing to mix until it completely dissolves. Next comes the packet of vanilla sugar, which will give a pleasant and aromatic flavor to our dessert.

After obtaining a homogeneous mixture, we start adding the oil, one cup at a time. After each addition, we mix for two minutes to ensure that the oil is well incorporated. Once the three cups of oil have been added, we move on to the flour. Just like with the oil, we will add the flour gradually, mixing after each cup.

After the flour is completely integrated into the dough, extinguish a pinch of baking powder with lemon juice, which will give a pleasant acidity and help the cookies rise. Grate the zest of a whole lemon over the dough, and then squeeze the rest of the juice. We mix everything for a minute, and our composition is ready. It should be soft but not runny.

For the heavier version, without a mixer, the process is different but just as exciting. We separate the egg whites from the yolks and start by beating the egg whites until frothy, gradually adding the sugar to form a firm meringue. In another bowl, we rub the yolks with the vanilla sugar, then carefully incorporate them into the beaten egg whites. We continue by adding the oil and then the flour, mixing gently to preserve the air in the composition.

After adding the baking powder extinguished with lemon juice and the lemon zest, we can customize the dough with raisins or leave it plain. It is important to use a large tray and baking paper to prevent sticking. The soft dough will be taken with the tip of a teaspoon and placed on the tray with the help of a finger, leaving space between the cookies for even baking.

The oven should be preheated to a high temperature, between 240 and 250 degrees Celsius. The cookies bake quickly, in 3 to 5 minutes, so don’t forget to keep an eye on them. Once baked, you can join them in pairs with jam or Nutella, and then decorate them with a delicious melted chocolate glaze. These cookies are sure to bring a smile to anyone who tastes them!

 Ingredients: 3 eggs 3 cups of sugar 3 cups of oil 6 cups of flour (+ one more cup if it is found that after mixing the ingredients the dough still flows) grated peel of one whole lemon baking powder (a pinch or a teaspoon) juice of half a lemon optional: a packet of vanilla sugar. Important: we use a classic measuring cup (for coffee). We will measure sugar, oil, and flour with the same cup. The quantities should not be changed at all.
