To prepare a delicious walnut and raisin cake, we start by melting the butter over a steam bath. It is essential that the butter is not hot, as high temperatures could turn the egg we will add into an omelette, which we do not want. So, with great care, after the butter has melted evenly, we add a whole egg and continuously mix with a spatula or whisk until the mixture becomes homogeneous and slightly frothy.
Once the egg is fully incorporated, we bring in the rest of the ingredients. We add 250 grams of powdered sugar, which will provide a sweet taste but also a fine texture. Next, we add 200 grams of chopped walnuts, which will add a crunchy note and a delicious aroma to the cake. Then, we add 100 grams of raisins, which will moisten in the mixture, bringing a natural sweetness. We do not forget about 50 grams of cocoa, which will give a deep chocolate hue, and finally, 5 tablespoons of flour, which will contribute to the cake's structure.
We carefully mix all the ingredients, allowing the mixture to steam for about 10 minutes. This stage is crucial as it helps develop the flavors and achieve a uniform texture. Once we are done mixing, we prepare to assemble the cake.
We take a loaf pan and cover it with aluminum foil, which will help us remove the cake more easily later. We place a first layer of the obtained mixture, then, beforehand, we sprinkle the ladyfingers with rum essence, lightly soaking them in a plate. We place the ladyfingers over the first layer of the mixture, and then we add another layer of mixture. We continue to alternate layers of mixture and ladyfingers until we finish the ingredients, ensuring that the last layer is of the mixture.
After we finish assembling, we cover the pan with aluminum foil and let it chill, preferably in the refrigerator, to firm up well. This process may take a few hours, but patience will be rewarded. Finally, we turn the cake onto a tray, remove the aluminum foil, and we can enjoy a delicious cake, perfect to be served alongside a cup of tea or coffee. This recipe is not only simple but also a true delight for the taste buds, being ideal for any occasion!
