Ingredients:
- 700 g smoked pork ribs
- 500 ml borscht (or to taste)
- 2 medium onions
- 1 red bell pepper
- 1 carrot
- 2-3 medium potatoes
- 1 nest of noodles
- 2 tablespoons oil
- 2 tablespoons tomato paste
- a bunch of fresh lovage
- salt and pepper to taste
Preparing the soup:
1. Preparing the pork ribs: Start by blanching the smoked pork ribs. Place them in a pot of water, add a little salt, and let them boil for 10 minutes. This step will help eliminate impurities and make the meat more tender.
2. Cooking the vegetables: In another pot, add 2 tablespoons of oil and heat it over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until it becomes translucent. Then, add the diced red bell pepper, grated carrot, and diced potatoes. Sauté the vegetables together for another 5 minutes, stirring constantly.
3. Adding the meat: Remove the smoked pork ribs from the boiling water and let them cool slightly, then cut them into suitable pieces. Add the chopped meat to the pot with the vegetables and mix well.
4. Boiling the soup: Pour 1.5 liters of water into the pot with the vegetables and meat, then add the tomato paste. Let the soup simmer on low heat for about 20 minutes, until the vegetables are tender.
5. Adding the borscht: When the vegetables are almost done, add the borscht and let it boil for another 5 minutes. Taste the soup and add salt and pepper to your liking.
6. Finishing the dish: In the last 5 minutes of cooking, add the noodles and chopped lovage, allowing the soup to boil until the noodles are cooked.
Serving:
