Ingredients:
- 300 g flour
- 1 kg pitted cherries
- 3 tablespoons butter
- 2 tablespoons sugar
- 3 eggs
- Water (approximately 150 ml)
- 2 tablespoons sour cream
- A pinch of salt
Preparation:
1. Making the dough: In a large bowl, add 300 g of flour and a pinch of salt. Make a well in the center and add the 3 eggs. Start mixing with a fork, gradually adding water until the dough starts to come together. It is important to add water gradually to avoid a dough that is too soft. Knead the dough for about 5-7 minutes until it becomes smooth and elastic. Cover it with a damp towel and let it rest for 15 minutes.
2. Preparing the filling: While the dough is resting, prepare the cherries. Wash them well, then cut them in half and remove the pits. You can add 2 tablespoons of sugar over the cherries to sweeten them a bit, letting them sit for 10 minutes. This step will help extract the juice from the cherries, making the filling even more flavorful.
3. Shaping the dumplings: On a floured surface, roll out the dough into a thin sheet about 1-2 mm thick. Use a knife or cutter to cut out 5 cm squares. In the center of each square, add 2-3 cherries. Fold the dumpling into a triangle, ensuring the edges are well sealed so they don’t open during boiling.
4. Boiling the dumplings: In a large pot, bring 3 liters of water with a pinch of salt to a boil. Once the water reaches boiling point, carefully add the dumplings, stirring gently with a spoon to prevent sticking. Let them boil for 5-7 minutes until they rise to the surface. When the dumplings are ready, remove them with a slotted spoon and let them drain.
5. Serving: In a pan, melt 3 tablespoons of butter. After the dumplings have drained, you can place them in the pan and lightly fry them in the hot butter to achieve a golden and crispy crust. Serve them warm, topped with sour cream, and if you like, you can add a sprinkle of powdered sugar for extra sweetness.
