Bean Stew
Ingredients: -500 g. beans -4 onions (2 for frying and 2 for boiling) -2 carrots -1 slice of celery -1 bell pepper -2 tablespoons of vegetables -2 tablespoons of tomato paste -oil for frying onions -1 sprig of thyme -salt -pepper
Like many other vegetables, beans are a versatile and nutritious ingredient, holding a special place in our diet, especially during fasting periods. Rich in protein, they provide an excellent alternative to meat dishes, ensuring the necessary intake of vitamins and minerals. Today, I will present to you a classic bean stew recipe, known by many as fried beans, a delicious and comforting dish, perfect for cool days.
To prepare this delicacy, we start by selecting the beans. It is essential to inspect them carefully, removing any impurities or damaged beans. After completing this step, we wash the beans in several waters, ensuring they are clean, and then let them soak for 8-10 hours. I prefer to leave them overnight, so they hydrate properly and cook faster.
Once the beans have soaked, we put them to boil in cold water. It is important to change the water twice to eliminate any unwanted substances. After the last change, we ensure the water level in the cooking pot is about two fingers above the volume of the beans. Here, we add finely chopped onion, diced carrot, and other vegetables. Celery, with its shorter cooking time, is added only after the other vegetables have started to soften.
Meanwhile, we prepare the sauté. We take the other two onions, chop them finely, and put them in a pan with hot oil. When the oil is hot enough, we add the onion and let it yellow, being careful not to burn it. Once the onion has turned golden, we extinguish everything with tomato paste. We let the mixture simmer for a few minutes, during which the flavors will blend harmoniously. When the sauté is ready, we add it to the beans.
Finally, we season the dish with salt, pepper, and a few sprigs of thyme, which will give a special flavor to the stew. We let everything simmer on low heat so that the flavors develop and penetrate well into the beans. This dish can be enjoyed both hot and cold, and it pairs perfectly with fresh bread or pickles. Thus, bean stew becomes not only a nourishing meal but also an excellent choice for family or friend gatherings. Enjoy your meal!
