Ingredients
For the base:
- 8 eggs
- 8 tablespoons of water
- 8 tablespoons of oil
- 200 g sugar
- 360 g flour
- 3 packets of strawberry pudding
- 1 teaspoon baking powder
For the cream:
- 1 l milk
- 3 packets of vanilla pudding
- 15 tablespoons of sugar
- 300 ml whipped cream
- 400 g cherries (pitted, preferably frozen)
For the jelly:
- 20 g gelatin
- 200 g cherries (pitted)
- 200 g sugar
- 300 ml black grape juice (preferably homemade)
Instructions
Step 1: Preparing the base
1. Beat the egg whites: In a large bowl, beat the egg whites with 8 tablespoons of water until frothy. This will provide a fluffy and light base.
2. Add the sugar: Continue mixing, gradually adding the sugar. Make sure it is completely dissolved to avoid unpleasant crystals in the base.
3. Incorporate the oil: Add the oil one tablespoon at a time, then an egg yolk. This technique will create a consistent emulsion.
4. Sift the dry ingredients: In another bowl, mix the pudding powder, flour, and baking powder. Add this mixture to the egg composition, gently folding with a spatula to retain the air from the egg whites.
5. Bake the bases: Pour the batter into a rectangular pan lined with parchment paper. Bake in a preheated oven at 180°C for about 40 minutes or until the base is golden and a toothpick inserted comes out clean. Allow to cool completely.
Step 2: Preparing the cream
1. Cook the pudding: In a pot, bring the milk to a boil and add the vanilla pudding packets and sugar, stirring constantly. Cook according to the package instructions until thickened.
2. Cool the pudding: After cooking, cover the pudding with plastic wrap to prevent a skin from forming and let it cool.
3. Add the whipped cream: Once the pudding has cooled, whip it for 2-3 minutes to make it fluffier. Add the whipped cream and continue to mix until you achieve a light and smooth cream.
Step 3: Preparing the cherry jelly
1. Cook the cherries: In a saucepan, place 200 g of cherries, grape juice, and sugar. Boil for 10 minutes to extract the flavors.
2. Hydrate the gelatin: In a small bowl, hydrate the gelatin in 2-3 tablespoons of juice. Then add it to the warm juice mixture, stirring well to dissolve completely.
Step 4: Assembling the cake
1. Cutting the base: Once the base has cooled, cut it in half.
2. Cream layer: Place the first half of the base on a platter and spread the cream evenly on top.
3. Add the cherries: Place the drained and cooled cherries on top of the cream.
4. Base layer: Place the second half of the base on top.
5. Add the jelly: Pour the juice and gelatin mixture over the top base and let it cool completely so that the jelly sets.
Serving suggestions
This cherry cake is delicious served cold, but you can enhance it with a dollop of whipped cream on top or vanilla ice cream for a temperature contrast.
Tips and tricks
- Fresh or frozen cherries: If you have fresh cherries, make sure to pit them well. Frozen cherries are just as delicious and will save you time.
- For a more intense flavor: You can add a few drops of vanilla extract to the pudding cream for an extra flavor boost.
- Gluten-free option: You can replace the flour with a gluten-free alternative, such as almond or rice flour, to make the dessert accessible to those with intolerances.
- Calories and nutritional benefits: A serving of this cake contains about 250 calories but is rich in vitamins A and C due to the cherries, also being a good source of antioxidants.
