Fine poppy seed cake
To prepare a delicious coconut and poppy seed cake, we will start by gathering the necessary ingredients and utensils. Make sure you have on hand: 4 egg whites, 200 g sugar, 200 g coconut, 100 g poppy seeds, 100 g flour, 1 packet of baking powder, 4 egg yolks, 100 g butter, 100 g sugar for the yolks, and colorful candies for decoration.
The first step is to focus on preparing the meringue. In a large bowl, beat the egg whites with a mixer on high speed until they become frothy. It is important that the bowl is clean and dry to achieve a perfect meringue. After the egg whites are frothy, we gradually start adding the sugar while continuing to mix. The mixing process should last about 5 minutes until the mixture becomes glossy and forms stiff peaks. At this point, we add the coconut and poppy seeds, gently folding with a spatula to avoid losing air from the meringue. Finally, we sift the flour together with the baking powder and gently incorporate it into the mixture.
We prepare a baking tray, which we cover with baking paper to prevent the cake from sticking. We pour the obtained mixture into the tray and level it evenly. We place the tray in the preheated oven at 180 degrees Celsius and bake for 25-30 minutes, or until the cake gets a light golden color on top. We check if it is baked by inserting a toothpick; if it comes out clean, the cake is ready.
In the meantime, we take care of the egg yolk cream. In another bowl, we mix the egg yolks with the sugar. We place the bowl over a bain-marie, stirring constantly to avoid the eggs from coagulating. We gradually add the flour, continuing to mix until the mixture thickens. We turn off the heat and let the cream cool.
When the cream is at room temperature, we take care of the butter. Make sure the butter package is soft, at room temperature. We beat it until creamy, then gradually add a tablespoon of the egg yolk cream, mixing continuously. This combination will give a rich and smooth texture to our cream.
After the cake has cooled, we can cover it with the obtained cream. Finally, we decorate with colorful candies, which will add a touch of cheerfulness and color to our dish. This cake is perfect for any occasion, being not only tasty but also visually appealing. Enjoy every bite!
