Beans with sausages

 Ingredients: -500 g of dried beans -3 large onions -500 g of slightly spicy sausages -2-3 tablespoons of tomato paste -spices: cumin, sweet paprika, basil, thyme, salt to taste -3 cloves of garlic

Beans are a wonderful ingredient, full of protein and nutrients, that can be transformed into a delicious paste, perfect for serving as an appetizer or side dish. We start by boiling the beans in a pot of cold water. Make sure the beans are well washed before adding them to the water. Let them boil over medium heat until tender, which can take between 30 and 45 minutes, depending on the type of beans used. After boiling, drain the beans and let them cool slightly.

Once the beans have cooled, place them in a large bowl and mash them with a blender or potato masher until you achieve a smooth paste. Add a few crushed garlic cloves, which will give the dish an intense and aromatic flavor. Don’t forget to add a little salt, which will enhance the flavors. Mix all the ingredients well until the garlic is fully incorporated into the bean paste.

In the next step, we focus on the onion. Slice the onion into thin scales for even sautéing. In a deep skillet, heat a little olive oil. Add the sliced onion and sauté over medium heat, stirring constantly, until it becomes glassy and slightly golden. Here comes the magic: add the tomato broth, which will bring a rich flavor and vibrant color to the sauce. Season with your favorite spices, such as salt, pepper, paprika, or oregano, to add extra flavor.

Let the mixture sauté for 1-2 minutes, then add a glass of water to create a more fluid sauce. Mix well, then add the sausages cut into suitable pieces. This step is essential, as the sausages will absorb the flavors of the sauce and become juicy and delicious. Cover the skillet and let everything simmer on low heat, so the water gradually reduces and a thick, flavorful sauce forms.

After a few minutes, check if the sausages are done and if the sauce has reached the desired consistency. If you wish, you can also add some extra ingredients, such as bell peppers or olives, to give it extra flavor and texture. Once everything is well cooked, serve the dish hot, alongside a generous portion of bean paste. Enjoy your meal!
