1. Start by preparing the dough. Put the grated cheese in a food processor and mix for a few seconds until fine. Add the flour, cold butter, and salt, continuing to mix until the mixture resembles wet sand.

2. Add the egg and a few tablespoons of cold water, then continue mixing until the dough starts to come together. If it is too dry, add a little water. Do not over-knead to maintain the tart's crisp texture.

3. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 15-20 minutes. This step will help achieve a tender tart with a pleasant texture.

4. Meanwhile, prepare the filling. Heat the olive oil in a pan and add the onion. Sauté until it becomes translucent, then add the garlic and liver. Fry the liver for 5-7 minutes until golden, stirring occasionally.
