A bit of history
Banana roll cake is a dessert that brings joy to many families' tables. Its origins are not very clear, but it is known to have become popular due to its versatility and the ease with which it can be customized. Whether you make it with jam, chocolate, or various fruits, it remains a favorite for everyone. The recipe we will prepare today is inspired by a dear friend, Corina, who generously shared it with me.

Necessary ingredients
*For the sponge:*
- 5 fresh eggs
- 5 tablespoons of sugar
- 5 tablespoons of flour
- 1 teaspoon of baking powder
- Strawberry jam (or any preferred jam) for rolling

*For the cream:*
- 1 liter of milk (preferably whole for a richer cream)
- 2 packets of vanilla pudding
- 5 tablespoons of flour
- 8 tablespoons of sugar
- 150 g of margarine or butter (at room temperature)
- 200 ml of whipped cream (beaten)
- 2-3 ripe (but firm) bananas

Step by step: Preparing the banana roll

1. Preparing the sponge
Start by preheating the oven to 180°C. In a large bowl, beat the egg yolks with the sugar until they become a creamy and light-colored mixture. Add the flour mixed with the baking powder and gently fold in with a spatula, being careful not to lose the air in the mixture.

2. Beat the egg whites
In another bowl, beat the egg whites with a pinch of salt until they form stiff peaks. These will add a light and fluffy structure to your sponge. Gently fold the egg whites into the egg yolk mixture, mixing slowly with a spatula or wooden spoon, being careful not to deflate the mixture.

3. Baking the sponges
Pour the mixture into a baking tray lined with parchment paper. Bake in the preheated oven for 15 minutes or until the sponge is lightly golden and passes the toothpick test. When ready, remove it from the oven and let it cool for a maximum of 5 minutes. Then, turn it out onto a damp kitchen towel and, using the towel, carefully roll the sponge. Let it cool completely.

4. Preparing the cream
In another bowl, combine the two packets of pudding, flour, and sugar with 100-150 ml of milk. Mix well until you obtain a smooth paste. In a saucepan, bring the remaining milk to a boil. When the milk starts to boil, add a few tablespoons of it to the pudding mixture, stirring quickly to avoid lumps. Then, pour everything into the saucepan and stir constantly until the cream thickens. Once thickened, remove the pot from the heat and let it cool.

5. Finishing the cream
After the cream has completely cooled, add the softened butter, mixing with a mixer until you achieve a smooth and creamy consistency. You can also add a drop of vanilla essence for an even more intense flavor.

6. Assembling the roll
Unroll the cooled sponge and spread it evenly with strawberry jam. Carefully roll it back up and set it aside. In a springform pan, arrange the slices of roll on the bottom and sides. Pour half of the cream, then place the banana slices and cover with the other half of the cream. Top with the beaten whipped cream.

7. Cooling
Place the pan in the refrigerator for at least one hour to set.

8. Serving
After the time has passed, carefully remove the sides of the pan and decorate as desired – you can use banana slices, grated chocolate, or even nuts for added texture.

Useful tips
- Make sure the eggs are at room temperature for better foam.
- You can use various jams or even melted chocolate instead of strawberry jam, depending on your preferences.
- If you want to add a crunchy element, you can sprinkle ground nuts or almonds inside the cream.

Frequently asked questions
- Can I use other fruits instead of bananas?
Yes, you can try strawberries, peaches, or even berries for a fresher variant.

- How long can the roll be stored?
The roll keeps well in the refrigerator for 2-3 days, but it is best when served fresh.
