Lamb Haggis
We begin the culinary adventure by gathering all the necessary ingredients to prepare a delicious dish based on vegetables and eggs, which will transform into a savory preparation, perfect for any occasion. The first step is to boil the vegetables we want – these can be carrots, zucchini, peppers, or even spinach, depending on everyone's preferences. We let the vegetables boil until they become tender and release their flavors, and then we carefully remove them onto a wooden board, where we will let them cool down.
Once they have cooled, it's time to chop them. Use a sharp knife to chop them as finely as possible; I personally prefer to use an electric chopper, which makes my work much easier. Once the vegetables are chopped, we transfer them to a large bowl, where we will add the necessary ingredients to create a homogeneous and tasty mixture.
We lightly beat a few eggs in a separate bowl, then pour them over the chopped vegetables, mixing with a whisk or spatula to ensure the eggs are well incorporated. We continue by adding green onions, dill, and parsley, all finely chopped, to add an extra freshness and flavor. Don't forget to season with salt and pepper to taste; these spices are essential to highlight the flavors of the vegetables.
To bind the mixture, we add two tablespoons of breadcrumbs, which will help firm up the preparation, and a little bread soaked in milk, along with the milk, to achieve a soft and moist texture. We mix well until all the ingredients are perfectly integrated.
Now we prepare the tray in which we will bake the dish. We grease a rectangular tray with a little oil and line it with breadcrumbs to prevent sticking. We carefully pour the vegetable mixture into the tray, smoothing the surface for an even appearance. We place the boiled eggs lengthwise in the middle of the mixture, for a pleasant look and to add a touch of flavor.
We place the tray in the preheated oven on low heat and let it bake for about 40 minutes. The dish is ready when it becomes golden and firm to the touch. It is recommended to let it cool and then store it in the refrigerator until the next day. This will not only allow the flavors to intensify but also make it easier to cut, achieving perfect slices.
It is served warm or as an appetizer alongside eggs, ham, vegetables, olives, or whatever you prefer. This recipe is not only tasty but also versatile, being able to be adapted with various combinations of vegetables.
