Ingredients:
- 800 g beans
- 500 g onions
- 500 g carrots
- 500 g bell peppers
- 500 g tomatoes
- 400 ml oil

We start by preparing the beans. Soak them in cold water the night before. This step is essential as it helps reduce cooking time and improves digestibility. The next day, drain the beans and rinse them under cold water to remove impurities. Then, place the beans in a large pot, add fresh water and a teaspoon of salt. Boil the beans over medium heat, stirring occasionally, until the beans become soft, about 1-1.5 hours. It is important not to add salt too early, as it can hinder the cooking of the beans.
While the beans are boiling, we prepare the vegetables. Peel and finely chop the onions, carrots, and bell peppers. It’s best to use a good knife to achieve even cuts, which will help cook the vegetables evenly. If you desire a more intense flavor, you can sauté the onions in a bit of oil before adding the other vegetables. In a large skillet, add the oil and let it heat before adding the onions. Cook the onions until they become translucent, then add the carrots and bell peppers, continuing to sauté the mixture for about 10-15 minutes.
Once the beans are cooked, drain them and add them to the skillet with the vegetables. Mix well and let everything cook together on low heat, allowing the flavors to meld for about 30 minutes. At this point, it’s time to add the tomatoes. If you are using fresh tomatoes, it is recommended to blanch and peel them first to achieve a smoother zacusca. If you opt for canned tomatoes, you can add them directly to the mixture.
To ensure a perfect texture for your bean zacusca, you can use a blender to puree the mixture, achieving a creamier consistency. However, if you prefer a more rustic zacusca, you can leave the mixture as it is. Finally, season with salt and pepper to taste, mix well, and let it simmer for another 10 minutes.
