- 150 g chocolate

Step-by-step instructions
1. Preparing the sponge
- Start by preheating the oven to 180°C. Prepare a rectangular baking dish (24x35 cm) greased with a little butter and dusted with flour to prevent sticking.
- In a large bowl, beat the eggs with the sugar until you achieve a stiff, light-colored foam. This process will take about 5-7 minutes.
- In another bowl, mix the flour, baking powder, and cocoa. Add this mixture to the egg mixture, gently folding with a spatula to avoid losing the air from the foam.
- Fold in the ground walnuts, mixing carefully again.
- Pour the mixture into the prepared dish and level the surface. Bake for 25-30 minutes, or until a tester (a toothpick) comes out clean from the center. Allow the sponge to cool in the dish.
2. Preparing the cream
- In a small saucepan over low heat, combine the flour, cocoa, milk, 2 tablespoons of sugar, and 1 cup of ground walnuts. Stir constantly until the mixture thickens and becomes smooth. Let it cool.
- In another bowl, beat the 4 eggs with the 8 tablespoons of sugar until foamy. Add this mixture to the cooled walnut mixture and mix well.
- In a separate bowl, beat the soft butter until creamy. Gradually add the walnut mixture, mixing well after each addition. Finally, fold in the roasted and chopped walnuts.
3. Preparing the Dobos layer
- Beat the egg whites until stiff peaks form, then gradually add the sugar, continuing to beat until a glossy meringue forms.
- Add the egg yolks one at a time, mixing well after each. Finally, fold in the flour with a spatula, being careful not to deflate the meringue.
- Pour the mixture into the same dish where you baked the sponge and bake for 10-15 minutes, until the layer turns golden. Allow to cool.
4. Preparing the chocolate glaze
- In a small saucepan, combine the chocolate, milk, and butter. Heat over low heat, stirring constantly, until everything melts and becomes smooth.
5. Assembling the cake
- On a platter, place the cooled sponge, then spread the cream evenly on top. Place the Dobos layer on top of the cream.
- Pour the warm chocolate glaze over the Dobos layer, leveling it well.
- Decorate with white chocolate flakes, which you can obtain by grating white chocolate with a fine grater.
6. Serving
- Allow the cake to cool completely at room temperature, then refrigerate for at least 2 hours before cutting. This resting time will help the flavors meld and make cutting easier.
Practical tips
- Make sure all ingredients are at room temperature for a uniform mixture.
- You can adapt this recipe using different nuts, such as almonds or hazelnuts, for a different flavor.
- If you want to give it a more intense taste, add a little vanilla or coffee essence to the walnut cream.
- This cake pairs wonderfully with a cup of coffee or tea, and vanilla ice cream will perfectly complement the delight.
