Pickled Bulgarian Peppers

To prepare these preserved hot peppers, the first essential step is to ensure that the peppers are well cleaned. Therefore, wash the hot peppers in 2-3 waters, taking care to remove any impurities. After washing them, trim the stems so that they are easier to handle and arrange in jars.
In a large pot, bring water to a boil. Add salt, vinegar, and sugar to taste, making sure to adjust these ingredients according to your personal preferences. Proportions may vary, but a ratio of 1 cup of water, 2 tablespoons of salt, 1/2 cup of vinegar, and 1 tablespoon of sugar is a good starting point. Let the mixture come to a boil, and its aroma will become more complex as the ingredients combine.
When the water has started to boil, add the hot peppers. It is important to leave them in the water for 1-2 minutes. After filling the jars with peppers, let the liquid in the pot boil again. Once it reaches the boiling point, pour the hot liquid over the peppers in the jars, ensuring that each jar is full and that the liquid completely covers the peppers. This step is important as it helps to sterilize the peppers and preserve their spicy flavor.
After filling the jars, seal them tightly. This is the moment when it is essential to ensure that the jars are airtight to prevent any contamination. Place the jars between blankets to keep them warm and allow the sterilization process to take place. Leave them like this until the next day, when they will have cooled completely. After they have cooled, move the jars to the pantry, on a dark and cool shelf, where they can be stored for a long time. This preservation process will give you a spicy delicacy that you can enjoy in various dishes, from salads to sauces.
