Preparing the pork schnitzel:
1. Start by preparing the slices of meat. Place each slice of pork loin or leg between two sheets of plastic wrap and gently pound with a meat mallet. This step is essential as it will help the meat become more tender and cook evenly. Make sure the slices are about 1 cm thick.

2. Season the meat slices with salt and pepper on both sides, allowing the flavors to penetrate well. You can also experiment with other spices, such as garlic powder or sweet paprika, to add extra flavor.

3. Prepare the frying pan. Choose a deep skillet and add enough oil to cover the bottom by about 1-2 cm. Heat the oil over medium heat, being careful not to burn it.

4. In a deep bowl, beat the two eggs with a pinch of salt. In another plate, mix the breadcrumbs with the flour. The flour will help the breadcrumbs adhere better to the meat, providing a crispier crust.

5. Take each slice of meat, first dip it in the beaten egg, ensuring it is evenly coated, then pass it through the breadcrumb and flour mixture. Press gently with your palm to secure the breadcrumbs onto the meat.

6. When the oil is hot enough (you can check by throwing in a crumb of bread; if it sizzles, it’s ready), add the slices of meat to the pan. Fry them in batches to avoid overcrowding the pan, for about 3-4 minutes on each side, until golden and crispy.

7. Once the schnitzels are fried, remove them to a platter lined with paper towels to absorb excess oil.

8. Serve the schnitzel hot, alongside a fresh vegetable salad. A combination of tomatoes, cucumbers, and red onion, drizzled with a little olive oil and balsamic vinegar, will perfectly complement the dish.
