To prepare this delicious recipe for gratin potatoes, start by choosing quality potatoes that are firm and blemish-free. Wash them well under a stream of cold water to remove impurities. Place them in a large pot, fill with cold water, and add a teaspoon of salt. Boil the potatoes in their skins for about 20-30 minutes, depending on their size, until they are tender but not too soft. Once they are ready, drain the water and let them cool slightly before peeling.
After they have cooled, peel the potatoes and slice them into thin rounds, about 0.5 centimeters thick. These rounds will be the base of our dish, providing a pleasant texture and a distinctive taste. In a skillet, melt two tablespoons of butter over medium heat. Add the flour and lightly brown it, stirring continuously to avoid lumps. When the flour turns slightly golden, start adding the milk gradually, stirring constantly.
