This treat combines the fresh flavors of citrus with the rich nuttiness of Nutella, creating a unique culinary experience. Whether you want to impress guests or simply indulge yourself, this recipe is the ideal choice. Let's get to work!
Preparation time:
- Active time: 45 minutes
- Cooling time: 2 hours
- Baking time: 50 minutes
- Total: 3 hours 35 minutes
- Servings: 8
Ingredients:
Tart crust:
- 275 g flour (plus one tablespoon for dusting)
- 180 g cold, diced butter (82% fat)
- 2 egg yolks
- 3 tablespoons cold milk
- A pinch of salt
- Vanilla (optional)
Citrus cream:
- Juice from 1 lime, 2 oranges, and 1 lemon
- Zest from 2 organic oranges (or organic lemon)
- 175 ml liquid cream
- 175 g powdered sugar
- 3 tablespoons cornstarch
- 5 large eggs
- Vanilla (optional)
Nutella cream:
- 2 cups (approx. 500 ml) liquid cream (we recommend Hulala)
- 6 heaping tablespoons of Nutella
Step by step:
Step 1: Prepare the crust
Start by sifting the flour into a large bowl. This will help aerate the flour and make the dough fluffier. Add the cold butter cubes and, using your fingers, rub the butter into the flour until you achieve a breadcrumb-like texture. It's important that the butter is cold to get a crispy crust.
Add the egg yolks, cold milk, a pinch of salt, and, if desired, a little vanilla. Mix everything until the ingredients come together, then form a dough. Use a tablespoon of flour to dust it, fold it a few times to give it a round shape, then wrap it in cling film and refrigerate for 30 minutes.
Step 2: Prepare the citrus cream
In another bowl, beat the eggs with the powdered sugar, vanilla, and citrus zest. Add the citrus juice and mix well. Incorporate the liquid cream and cornstarch, stirring until you obtain a homogeneous mixture. Cover the bowl and keep it cool.
Step 3: Bake the crust
After the dough has chilled, remove it and carefully place it in a tart pan (ideally one with a removable bottom). You can use cling film to roll it out evenly. Make sure the dough rises slightly up the sides of the pan. Chill for another 10 minutes while preheating the oven to 170 degrees Celsius.
Once the oven is ready, take the pan out of the fridge, pierce the dough all over with a fork, cover it with parchment paper, and place beans or a baking weight on top. Bake the crust for 10 minutes.
Step 4: Add the citrus cream
After 10 minutes, take the crust out of the oven and remove the parchment paper with the beans. Gently heat the citrus cream, being careful not to boil it. Pour the cream over the pre-baked crust and bake everything for 40 minutes or until the edges are nicely browned and the cream is set. Let the tart cool, then carefully remove the ring from the pan and refrigerate the tart.
Step 5: Prepare the Nutella cream
In a saucepan, heat the liquid cream, adding the Nutella. Stir until the mixture becomes fluid, being careful not to let it boil. Once you have a smooth cream, let it cool completely, then whip until fluffy and airy. This step may take a little while, but don't rush; patience is key to a perfect result!
Step 6: Assemble
Take the tart out of the fridge and place it on a serving platter. Spread the Nutella cream on top, creating lovely waves with a spoon. Let the tart cool for a few hours before serving. It is best enjoyed chilled, and the flavors intensify as it sits in the fridge.
