Skordalia
To prepare a delicious potato salad, we first take care of our potatoes. We choose medium-sized potatoes that will boil evenly. We peel the potatoes and cut them into cubes so that they cook faster. We place the potatoes in a pot with cold water, add a little salt, and let them boil over medium heat. It is important not to overboil them so they do not crumble. When the potatoes become soft but still firm, we drain them and let them cool slightly.
While the potatoes are cooling, we prepare the garlic. We use a few cloves of fresh garlic, which we crush with a knife or a mortar. The aroma of the garlic will add a boost of flavor to our salad. Once the potatoes have cooled, we place them in a large bowl and gently mash them with a fork, leaving some larger pieces for a pleasant texture.
Now, we add the crushed garlic over the potatoes. Next, we will add extra virgin olive oil, which will give a rich note to the salad. Here, the secret is to add the oil gradually, mixing vigorously to achieve a fine emulsion. This process will help integrate the flavors and make the salad creamy and homogeneous. After incorporating the oil, we add apple cider vinegar or balsamic vinegar, depending on our preferences.
Finally, we taste the mixture. If we find it too thick, we can add a tablespoon of water, but I prefer not to add water to maintain the creamy consistency. It is important to avoid using a food processor so as not to turn the potatoes into puree. However, at the end, we can use the processor on a very low setting to slightly homogenize the composition.
We season the mixture with salt and pepper to taste. A potato salad is perfect as a side dish or as a main course, alongside a fresh green salad. The vibrant color and rich aroma of garlic make it an ideal choice for festive meals or simply for a family dinner. It can be left in the fridge for a few hours, which will intensify the flavors. We serve it with freshly chopped parsley on top for an extra touch of freshness. This potato salad is simple yet extremely tasty!
