The recipe I will detail today is one that transforms chicken meat into the perfect delight for any occasion. It is a preservation method that involves marinating and seasoning the chicken, giving it varied and deep flavors. I used chicken breast, but of course, you can apply this technique to other parts of the bird as well.
To start, it is essential to choose fresh chicken meat, preferably boneless chicken breast. I prepared two portions with distinct flavors: the first combination consisted of black pepper and coriander, salt, and honey, while for the second I used tarragon, nutmeg, and celery tops, again with salt and honey. Marinating is a crucial step; so I decided to start with a bath of white wine, meant to kill bacteria and keep the meat juicy. I let the chicken breast soak in the wine from morning until evening, feeling the aroma gradually infuse.
After removing the meat from the wine, it was time to apply the spices. I finely ground the desired spices and began to massage each piece of chicken with a generous mix. Laying the meat on plastic wrap, I sprinkled salt and drizzled polyfloral honey, which will help with later caramelization. I tightly rolled each piece in the wrap and stored them in the refrigerator for five days, turning them daily to allow for an even marinating process.
After this period, the chicken needed another bath in wine, where I added the spices used initially again. Thus, the flavors were refreshed, and the meat was intensified. I hung the chicken breast in a cool place, making sure to keep my ingredients handy. Although the meat was already 'cooked', a simple sizzle on the grill will add those characteristic lines, and the flavors will be enhanced through cooking.
