To prepare a delicious carnival dessert from Italy, we start by sifting the flour into a large bowl, ensuring it is fine and lump-free. This is the base of our recipe, and its texture will directly influence the final result. After sifting the flour, we add the cold butter, cut into small cubes, to ensure it incorporates evenly into the dough. The cold butter helps achieve a tender texture, characteristic of sweets.

Next, we add the beaten eggs, which will provide structure and richness to our dough. The limoncello liqueur, known for its intense lemon flavor, will add a note of freshness, while the grated lemon zest will further enhance this vibrant taste. Sugar is added to balance the acidity and provide sweetness. We mix all the ingredients with a spatula or a wooden spoon, ensuring everything is well combined.

Now, the next step is to gradually add the white wine in small amounts, mixing continuously. The goal is to obtain a dough with a consistency similar to that of noodles, slightly elastic but not too sticky. Once we achieve the desired dough, we wrap it well in plastic wrap and let it rest on the work surface for an hour. It is important not to put it in the fridge, as we want the butter to remain at room temperature to facilitate further rolling.

After the dough has had time to relax, we sprinkle the work surface with a little flour and start rolling it out into a very thin layer. If you have a pasta machine, this is a perfect opportunity to use it, but a rolling pin is also effective. The dough should be thin enough to allow the formation of delicate shapes, yet robust enough to withstand frying.

Once we have rolled out the dough, we cut it into the desired shapes; I chose the classic shape, but you can experiment with different cuts. Peanut oil is ideal for frying, ensuring a subtle flavor and perfect crunchiness. It is important that the oil is not too hot to avoid burning the sweets. We carefully fry each piece until they become golden and crispy.

Once cooled, we generously dust with powdered sugar, giving them an attractive appearance and additional sweetness. These delights are perfect for serving at parties or festive carnival meals. Enjoy every bite and savor the authentic Italian taste. Bon appétit!
