Quick stew with homemade sausages and vegetables
There have been many days when I woke up almost at noon with nothing prepared and half an empty fridge. When time is pressing, I grab what I have on hand: some homemade sausages, leftover vegetables from a soup, and a few cans from the pantry. It’s the kind of meal you make quickly, without grand plans, and yet it’s hearty and tasty. I’ve learned that pre-cooked vegetables and good canned goods can save any hectic day.
Quick Info
Total time: about 30 minutes
Preparation time: 10 minutes
Cooking/baking time: 20 minutes (in the oven)
Servings: 4
Difficulty: easy
Recipe type: quick meal, family lunch
Ingredients
1 kg homemade smoked sausages
1 can red beans (approx. 400 g)
1 can tomatoes in tomato juice (400 g)
2 boiled potatoes, diced
2 boiled carrots, sliced
2 boiled parsley roots, sliced
1 onion
2 tablespoons olive oil
Salt and pepper, to taste
1/2 teaspoon dried thyme
A splash of hot sauce (like Piri Piri)
2 tablespoons roasted pepper paste
Preparation method
1. Cut the sausages to your desired length and brown them in a non-stick pan with a tablespoon of oil. Put a lid on and let them cook over medium heat so they don't burn. You don’t need to cook them too long, just enough to get some color.
2. Peel and finely chop the onion. In a pan, heat the other tablespoon of oil and sauté the onion until it becomes translucent.
3. Cut the boiled potatoes, carrots, and parsley root (all boiled) into whatever shape is comfortable for you, usually cubes and slices. Drain the canned beans and rinse them under cold water.
4. Cut the canned tomatoes into cubes. Don’t throw away the juice; add it to the dish as well.
5. In a heat-resistant dish, add all the vegetables: carrots, parsley, potatoes, beans, tomatoes with their juice, and the sautéed onion.
6. Add the roasted pepper paste, remaining tomato juice (if separate), thyme, salt, pepper, and a bit of hot sauce, according to your heat tolerance.
7. Mix everything with a spoon directly in the dish.
8. Cover the dish with a lid or foil and place it in the preheated oven at 200°C for 20 minutes.
9. Finally, serve the warm vegetable dish with the fried sausages on the side. It also goes well with some pickles if you have them in the fridge.
Why I make this recipe often
It’s a quick solution when I don’t have much time to spend in the kitchen. You can use leftover boiled vegetables or whatever you have in the pantry, and if you have homemade sausages, the dish has a special flavor. Basically, I don’t waste time shopping or preparing. It can be easily adapted, and the ingredients are not picky.
Tips and variations
Tips
If you have leftover vegetables from soups or broths, they work very well here.
Don’t complicate yourself with the quantities of vegetables; the important thing is that they are boiled and that you don’t exceed the volume of the oven dish.
Use homemade sausages, but store-bought ones can also be okay if you don’t have anything else.
Check the salt at the end, as sometimes smoked sausages are saltier.
Substitutions
Potatoes can be replaced with boiled zucchini or boiled peas.
Thyme can be omitted or replaced with dried basil.
Roasted pepper paste can be substituted with pepper paste or a bit of tomato paste if you don’t have it.
If you want a vegan version, omit the sausages and increase the amount of vegetables.
Variations
You can add other boiled vegetables: celery, roasted peppers, or cauliflower.
If you don’t have red beans, you can use white beans or even boiled chickpeas.
With other types of sausages (spicy, garlic), it turns out just as well, just adjust the spices.
Serving ideas
It goes best with pickles (cucumbers, green tomatoes).
You can sprinkle some chopped herbs (parsley or dill) on top when serving.
For lunch, you can heat the vegetables with slices of sausage on top, all in one bowl.
Frequently asked questions
1. Can I use other types of beans?
Yes, any type of canned beans works, even white or speckled beans.
2. If I don’t have roasted pepper paste, what can I use?
You can use pepper paste, tomato paste, or, if necessary, you can skip this ingredient.
3. Can I prepare the recipe without an oven?
Yes, you can mix everything in a pot on the stove, with a lid, over low heat for about 15-20 minutes.
4. What can I do if the vegetables are not pre-cooked?
If you use raw vegetables, they need to be boiled separately before adding them to the dish; otherwise, they won’t cook completely in the oven.
5. Can the dish be made only with vegetables, without sausages?
Yes, if you want a vegan or vegetarian version, just omit the sausages and adjust the spices to taste.
Nutritional values
Estimated for one serving (1/4 of the recipe): approximately 450-500 kcal. Protein intake is significant due to the sausages (about 20-25 g/serving), carbohydrates from vegetables and beans (35-40 g), moderate fats (25-30 g/serving) – this depends a lot on the type and amount of sausages and the oil used. Salt may vary, especially if you use saltier homemade sausages or not.
Storage and reheating
The dish can be stored in the fridge in a covered container for 1-2 days. It reheats quickly in the microwave or on the stove over low heat, with a little water if it seems too dry. The fried sausages can be reheated alongside the vegetables, but they won’t taste better the next day; the recipe is best served fresh. If you want to keep it longer, I recommend storing the vegetables separately from the meat.
