This simple recipe combines crunchy textures and intense flavors, creating a dish that will impress any guest. Plus, it is easy and quick to prepare, making it ideal for days when time is limited. Let's see together how to prepare this delight!

Total preparation time: 1 hour
Preparation time: 15 minutes
Baking time: 45 minutes
Number of servings: 4-6

Ingredients:
- 1.5 kg carp (6 large pieces)
- Salt and pepper to taste
- 150 ml olive oil or sunflower oil
- 1 glass of 150 ml dry white wine
- 5-6 cloves of garlic
- 1/2 teaspoon salt (for garlic sauce)
- 20 ml oil (for garlic sauce)
- 100 g tomato paste

Preparation:

1. Preparing the fish: Start by cleaning the carp, if it is not already prepared. Make sure it is well washed and dried with a paper towel. Generously season the fish with salt and pepper both outside and inside to enhance its flavor. This step is essential for a well-cooked and tasty carp.

2. Heating the oil: Preheat the oven to 220 degrees Celsius. In a yena dish (which helps achieve a crispy crust on the fish), add 150 ml of oil and place the dish in the oven for 10 minutes. This technique will ensure that the fish fries evenly.

3. Adding the fish: Once the oil is hot, carefully remove the dish from the oven, keeping in mind that it is very hot. Place the pieces of carp in the hot oil, being careful not to overlap them. Cover the fish with crushed garlic, which will add a special flavor.

4. Baking the carp: Put the dish in the oven and let the carp bake for 20 minutes. Then, using a spatula, turn the pieces of fish to the other side and continue baking for another 20 minutes at the same temperature. This will ensure even cooking and a perfect texture.

5. Adding the wine: Towards the end, when the fish is almost done, add the white wine to the dish. This will add moisture and infuse the carp with delicious flavors. Let it cook together with the fish for 20 minutes, turning the pieces again to soak well with the wine.

6. Preparing the garlic sauce: In the meantime, prepare the garlic sauce. In a mortar or using a blender, crush 5-6 cloves of garlic with 1/2 teaspoon of salt. Add 20 ml of oil and 100 g of tomato paste, mixing until you obtain a smooth paste. This garlic sauce with tomato paste adds a unique and colorful touch, perfect to accompany the carp.

7. Serving: Once the carp is cooked and aromatic, carefully remove it from the dish and place it on a platter. Pour the garlic sauce over the fish or serve it separately in a small bowl. You can garnish the dish with lemon slices or fresh parsley for an extra touch of color and freshness.

Serving suggestions and variations:
- This baked carp pairs wonderfully with grilled vegetable sides or mashed potatoes.
- You can experiment with different types of fish, such as trout or salmon, to add a touch of diversity.
- If you prefer a spicier taste, add some ground chili pepper or paprika to the garlic sauce.

With this baked carp recipe with wine and garlic sauce, you will achieve a tasty dish that will turn any meal into a celebration of flavors. Enjoy your meal!
