To prepare a delicious pig's trotters recipe, we will follow the steps carefully and patiently to ensure we achieve a savory dish. We start by preparing the trotters, which we will lightly scorch over the stove flame. This step is essential to remove any impurities and to give them a distinct flavor. After they have been scorched, we thoroughly clean the trotters, ensuring that no residues remain. Then, we wash them well under a jet of cold water.

Once the trotters are clean, we move on to cutting them. Using a sharp knife, we carefully cut the skin lengthwise, being careful not to injure ourselves. After this operation, the trotters are ready to be boiled. We fill a pot with water, add salt, a selection of vegetables such as carrots, onion, and celery, a few bay leaves, and the juice of a freshly squeezed lemon.
