Necessary ingredients:
- 600 g flour
- 250 ml milk (slightly warm)
- 3 eggs + 1 egg for brushing the sweet breads
- 200 g sugar
- 1 tablespoon dry yeast
- ½ pack margarine (about 125 g)
- 200 g ground walnuts
- 100 g Turkish delight cut into small cubes
- 1 tablespoon vanilla essence
- 1 pinch of salt
- Zest of ½ orange
- 1 tablespoon cocoa
Preparation of the sweet bread:
1. Preparing the ingredients: Make sure all ingredients are at room temperature or slightly warm. This step is essential for proper fermentation of the dough.
2. Activating the yeast: In a small bowl, mix the yeast with one tablespoon of sugar and a little warm milk. Let the mixture sit for 5-10 minutes until it becomes frothy. This will ensure good fermentation.
3. Preparing the dough: In a large bowl, separate the egg whites from the yolks. Beat the yolks together with the sugar until creamy and the sugar is completely dissolved. In another bowl, beat the egg whites until they form a firm foam.
4. Forming the starter: In the flour, make a well in the center and pour in the activated yeast mixture. Start mixing with a little flour from the edges, forming a starter. Let it rise for about 20 minutes.
5. Combining the ingredients: After the starter has risen, add the beaten yolks, the egg whites, and the walnut cream (which you will prepare in the next step) to the bowl. Gradually incorporate the remaining milk, vanilla essence, orange zest, and a pinch of salt.
6. Adding the margarine: Slightly heat the margarine and add it gradually while kneading the dough. Continue kneading the dough until it becomes elastic and no longer sticks to your hands. Cover the bowl and let it rise for 40 minutes in a warm place, away from drafts.
7. Preparing the filling: In a bowl, mix the ground walnuts with 3 tablespoons of sugar, vanilla essence, one egg white, cocoa, and optionally, rum essence. This walnut cream will add a rich flavor to your sweet bread.
8. Forming the sweet bread: After the dough has risen, divide it into two equal parts (or more, depending on the size of the pans). Roll each piece of dough into a rectangular sheet, add the walnut cream and the small cubes of Turkish delight, then roll tightly.
9. Second rising: Place the sweet breads in pans lined with parchment paper and let them rise for another 15 minutes. During this time, beat an egg yolk with a tablespoon of water and brush the surface of the sweet breads for a golden crust.
10. Baking: Preheat the oven to 160 degrees Celsius. Bake the sweet breads for 40-45 minutes, or until they are golden and pass the toothpick test.
11. Flavor syrup: In the last minutes of baking, prepare a syrup from ½ cup of hot water and 4 tablespoons of sugar. After removing the sweet breads from the oven, brush them with the warm syrup and let them cool slightly.
Serving and variations:
This walnut and Turkish delight sweet bread is delicious served warm, but can also be enjoyed after it has cooled. A unique suggestion would be to sprinkle it with powdered sugar before serving for a festive look.
