1 kg chestnuts

Preparation method

1. Place the chestnuts in a large bowl and cover them with cold water. Sprinkle salt (enough to make the water taste salty, no need to measure exactly). Let them soak for an hour. This helps them roast better and peel easier.

2. After soaking, drain them and pat them dry with a towel. With a sharp knife, score each chestnut on the rounded side. A not too deep cut, just enough to prevent them from exploding in the oven and to make peeling easier after roasting.

3. Place the scored chestnuts on a baking tray. Don't overcrowd them, leave space between them. Put the tray in the preheated oven at 200°C.

4. During baking (20-30 minutes), open the oven a few times and sprinkle the chestnuts with a little water. I usually use a spoon and quickly splash a little water over them to prevent them from drying out.

5. Halfway through the time, turn the chestnuts with a spatula or by hand to ensure even roasting.

6. Once they are browned, take the tray out and immediately cover the chestnuts with a clean, damp towel. Let them sit like that for 5-10 minutes. The moisture helps the shell come off without tearing the chestnut's flesh.

7. Peel them while they are still warm. They peel much easier this way.

8. They can be eaten plain, warm, or you can make puree from them if you want to use them in desserts or as a side dish.
