Ingredients: 500 g of boiled potatoes in their skins and mashed, 200-250 g of flour (depends on the flour used), 2-3 tablespoons of oil, 2-3 tablespoons of semolina, 1 teaspoon of salt, breadcrumbs, a little oil for breadcrumbs
To prepare a delicious recipe for gnocchi with jam, start by choosing quality potatoes that are starchy and have a creamy texture, such as 'Flour' type. Begin by boiling them whole with the skin on, in a large pot of well-salted water, so they develop an even flavor. Boil them for about 30-40 minutes, depending on their size. Once they are ready, remove them from the water and let them cool slightly, but not too much so they can be peeled easily.
After they have cooled, carefully peel them, keeping in mind that the temperature may still be high. Use a potato ricer or meat grinder to turn them into a fine puree. This will be the base of your dough. Add flour, oil, salt, and semolina to the potato puree. Mix the ingredients well, and if you notice that the dough is too sticky, start adding flour gradually until you obtain a mixture that no longer sticks to your hands.
Once the dough is ready, roll it out on a clean surface dusted with flour into a thick blanket shape. Use a glass to cut circles from the dough. Each circle will be filled with jam or fruit spread, preferably plum, but you can also opt for other flavors depending on your preferences. After filling each circle with jam, fold it over and press the edges with a fork to ensure they seal well, preventing the jam from leaking during boiling.
Boil the gnocchi in salted water, and when they rise to the surface, you know they are ready. Remove them with a slotted spoon and let them drain. Before serving, prepare the breadcrumbs: toast them in a dry pan, stirring constantly, until golden and crispy. Add a few drops of oil to give them a richer flavor, then roll the boiled gnocchi in the breadcrumbs obtained.
For a perfect finish, serve them warm, dusted with powdered sugar mixed with cinnamon. They will bring a sweet, aromatic note, making them an excellent choice for dessert or a snack.
