Mushrooms with sautéed potatoes
We start by preparing the necessary ingredients for this delicious recipe, which will bring the flavors of the forest directly to your table. We will use fresh porcini mushrooms, the best friends of fried potatoes, which we will turn into a quick yet impressive dish.
The first step is to carefully clean the porcini mushrooms, using a damp cloth to remove impurities. Then, we slice them thinly and as evenly as possible to ensure even frying. In a non-stick pan, we add a little olive oil or butter, as preferred, and heat the pan well. When the oil starts to shimmer, we add the slices of porcini. It is important not to overcrowd the pan, allowing the mushrooms to fry properly and evaporate their moisture. We stir occasionally until the mushrooms become golden and tender, and their enticing aroma fills the entire kitchen.
Meanwhile, we take care of the potatoes. It is recommended to choose waxy potatoes, which bake well and become crispy on the outside. After peeling them, we cut them into small cubes, about 1-2 cm. In another pan, we add a little oil again and heat it over medium heat. When the oil is hot, we add the potato cubes, which will quickly turn golden and delicious. We stir constantly to prevent sticking and ensure even frying.
Once both the porcini and the potatoes are ready, it is time to combine these two wonderful ingredients. We pour the fried porcini over the sautéed potatoes and mix well, allowing them to meet in the pan for 2-3 minutes. This step will allow the flavors to intertwine, creating a dish with a deep and savory taste.
To add freshness and flavor, we now add finely chopped fresh parsley, which will bring a splash of color and an unmistakable fragrance. Also, don’t forget to add chopped garlic, which will further enhance the taste. We season with salt and pepper to taste, mixing again to ensure all ingredients are well incorporated.
