Fresh pea salad with kaiser – a simple and delicious recipe for warm summer days or a quick lunch! This salad is not only easy to prepare but also full of flavors, perfect for bringing a touch of freshness to your plate. The total preparation time is about 30 minutes, and this recipe is sufficient for 4 generous servings.

Ingredients:
- 3-4 large potatoes, boiled
- 1 small can of peas (about 400 g)
- 200 g kaiser (or another type of smoked sausage)
- 1 can of baby corn
- 150 g marinated mushrooms (or fresh, as preferred)
- 3-4 tablespoons of olive oil
- salt and pepper to taste

Preparation:
1. Start by boiling the potatoes. Choose large, starchy potatoes for a pleasant texture in the salad. Boil them in salted water for 20-25 minutes or until tender. Once cooked, let them cool slightly, then peel and cut them into large cubes.

2. In a non-stick pan, add a little oil and heat it over medium heat. Cut the kaiser into cubes or strips and fry it in the oil until crispy and golden. This step is essential for adding an intense flavor to the salad. Once done, let it cool in a separate container.

3. In a large bowl, combine the boiled potatoes, drained peas, chopped baby corn, and marinated mushrooms, cutting them if they are large. Add the cooled kaiser and gently mix to avoid crushing the potatoes.

4. Drizzle the salad with olive oil, then season with salt and pepper to taste. Carefully mix everything to combine the ingredients without smashing them.

5. Let the salad sit for a few minutes to allow the flavors to meld. This salad is served at room temperature but can also be chilled, so feel free to put it in the fridge if you prefer a cold snack.

Serving:
This pea and kaiser salad can be served as a main dish or as a side dish alongside grilled meat. For an extra flavor boost, you can add some finely chopped fresh parsley or dill. Also, for a crunchy touch, you can sprinkle some toasted almond flakes on top.

Variations:
If you want to adapt the recipe, you can replace the kaiser with grilled chicken breast or opt for fresh mushrooms sautéed with garlic. Another interesting variation would be to add some halved cherry tomatoes or olives for a Mediterranean taste.

This pea salad is an excellent choice for a quick and healthy lunch, being full of nutrients and flavor. Don't hesitate to experiment with your favorite ingredients and personalize your recipe!
